Made recipe: frozen organic spinach cooked until tender, cooked carrots in water 30 minutes, blenderized veg with 2 whole eggs, Green & Black's melted baker's choc., 2 tsp vanilla and 1/4 cup canola oil. Used 1/2 c Bob's Red Mill gluten free flour, 1/4 c. HiMaize Corn Fiber and 1 1/2 tsp baking powder. Baked at 250 F to help keep oil from oxidizing. Served warm and there was no trace of vegs at all, no flecks of green or orange, no veggie taste, and preschoolers gobbled them up.

I just tasted the brownies and I can't say I really like it. The texture is more of a cake. And to be honest, it's not half a cup of a vegetable or fruit in a recipe that gives the portion recommended each day. It's divided in 12 brownies! I think it's good for someone who really wants to count their calories. When I eat a brownie from my usual recipe, I only eat one because it is really satisfying. That's the difference between Americans and Europeans. They eat more of bad stuff and they are bigger and bigger. When you eat what you like in a reasonable way, there is no reason to deprive yourself. I definitely will not make this recipe again.

Hello,

I'm trying this recipe today. Instead of spinach puree, I will use unsweetened apple puree and baby carrot puree, this way, there are no crumbs in the mix. Also, I will mix the egg whites until they are fluffy, maybe this will make the texture of the brownies lighter... After reading all the comments, I wonder why I'm still trying this recipe ☺! Will let you know how it tastes. If there is no taste of spinach, why not use baby pea puree? This way, you are sure not to see some green crumbs all over the brownies and it's a vegetable too.

Don't add all pureed carrot. Hold some fresh out and ground fine. Add before baking. Adds a crunchy bite and my husband thinks there's nuts in them. I've been doing this kind of cooking for 40 years. My kids call me the whole earth mom.
Thank you for your cook book. You have some awesome ideas. LMW

Great idea! I wonder whether adding choco chips would be good? Also, would you happen to know the amount of iron these can provide? I'm looking for recipes to please a choco lover who's anemic.
