Lentil and chorizo salad

I know of at least one carnivore, not omnivore, but carnivore that just cannot abide vegetables with the exception of potatoes. And it is with this person in mind that I made this dish, a way for her to not even notice that there are dreaded legumes sharing the plate with her beloved sausages.

I used of course, the fabulous sausages that I got from Eumundi Smokehouse which are so flavoursome you only need 2/3 a sausage for this whole dish. This dish also has the advantage of being really easy to make, and can be done in a frantic 5 minutes or a leisurely 10 minutes with most of the pain being in the fairly insignificant amount of chopping.

Lentil and chorizo salad

  • 2/3 of a 10cm long chorizo (or similar type of sausage) cut into discs, then cut into quarters
  • 1 teaspoon oil
  • 1/2 onion chopped
  • 2 cloves garlic chopped
  • 400g tin organic lentils drained
  • 1 teaspoon dried oregano
  • Splash of balsamic glaze or balsamic vinegar
  • Salt and pepper

1. In a medium saucepan, fry chorizo in dry pan until lightly browned, add oil and then fry garlic and onion until onion is soft.

2. Add drained tin of lentils and season with salt and pepper and oregano.

I added chopped walnuts although I think you could easily leave these out.

    Oh yum - i’m always looking for new things to do with chorizos! How many does that recipe serve? The piggy in me thinks one :P

    How synchronicitous! I just found a chorizo, potato and broad beans recipe on the weekend and have assembled the ingredients for a trial run. This one isn’t quite as homespun, it’s Spanish and incorporates sherry vinegar. Plus you have to bring 8 cloves of garlic to the boil three times (an almost arcane touch). Will let you know how it goes.

    Hi Nic-hehe good question! I’d say 2-3 as a side dish or 1 hungry person as a main. So you’re not very far off at all and not at all piggy :D

    hello?

    i just want to say that as said carnivore, i was out of the country when this dish was made. luckily, the uk laws are very lax, so you will be able to make this dish for me with eumundi sausages when you come over.

    Oh, Hello.

    I like very much lentils, could you perhaps make this without the meat sausages that a poor king of the pastures has been slaughtered for???

    I made this dish yesterday and it was delicious. I didn’t manage to source any chorizos as yummy as the Eumundi ones must be, but it still made a wonderful, lazy Sunday lunch!

    And yes, it serves 1 :P

    I made this tonight. Thanks for the recipe. Went over quite well with the hubs! I made it with a whole pound of dried lentils, cooked in the slow cooker, two sticks of chorizo, and threw in some fresh green beans.

    The only thing that confused me: Are you supposed to chill it after the chorizo is cooked? I didn’t have time, so with the cold lentils the dish was pretty much lukewarm. Good, tho.
