I first tried this when my husband’s sister made these for us. I was surprised as we had just popped over and she had invited us to stay for dinner. It always fascinates me when people can rustle up delicious food on the spur of the moment. I often have competitions with myself to see what I can come up with using whatever I have in my cupboards and fridge. I’ve never taken it as far as having a whole dinner party unplanned, that would be far too stressful and people may not appreciate my sentiment.
You can definitely leave the sour cream out to make it low fat or use low fat sour cream. We opted to leave it out all together as wanted to make it as healthy as possible. We also didn’t use brioche, preferring seeded bread but choose whatever bread you would like for this, just choose one as the juices are delicious and you need the bread to soak it up.
The-Devil-Made-Me-Do-It Mushrooms on brioche
- 4 tablespoons mango chutney (or apricot jam)
- 1.5 cms piece grated ginger
- 2 tablespoons Worcestshire sauce
- 1 tablespoon coarse grain mustard
- 1 tablespoons paprika
- 5 tablespoons orange juice
- 1 spanish onion sliced
- 2 large slices brioche (or bread of choice)
- 25g butter
- 1 tablespoon oil
- 250g mushrooms halved if small, sliced if large
- 2 tablespoons sour cream (optional)
1. Cut up any large piece of mango and mix with the ginger, Worcestshire sauce, mustard, paprika and OJ
2. Toast brioche, keep warm
3. Melt butter in pan with oil. Fry shallots for 3 minutes. Add mushrooms and fry gently until golden.
4. Add chutney mixture to the pan and heat through for 1 minute, then stir in the cream.

This looks delicious, my mouth is watering at the thought. I’m a little confused though - are the first 5 ingredients for making the chutney? Or should chutney be added to the other ingredients???

I appreciate that you shared your lower fat version..as I am presently eating low or no fat food because of health issues.
If ever I am somewhere.. in someone’s house and they ask me to stay for dinner.. I find that so heart warming.. that they want to include me/us. I’ve only offered such a thing a handful of times..because usually, when hosting a meal.. I don’t do anything by halves.. and don’t go the ’simple’ route. I’m trying to get better at that though. Hubby and I spoke of your lovely bagels when we made them..and how we could invite people over just as a batch were coming out of the oven.. and that could be a meal. A plate of fillings..and just “go for it”. Often I don’t think of serving people food that I eat at home on a regular basis..and that’s part of the problem!

It can really be made with very little fat yet its still full of flavour so I can definitely recommend you try it. How is it going? Hope you’re feeling ok?
I agree, its really lovely to be asked to stay for dinner and yes as you said, it makes you feel included.
The bagel buffet idea sounds great for a weekend lunch! I know what you mean about going with the whole kit and caboodle-I have the tendency to do that too. But a casual idea like the help yourself to filling bagels would be wonderful. And I think people can get a bit creative with their bagel fillings too so that’s always fun!
In the early 90’s I remember one of my sisters favourite lunches at my place was just bread rolls and fillings in the centre of the table. Not sure she’d go for that now.

Hi Maria-I like the idea of the fresh home made bagels-they’re something that is really hard to find a good one of. They’re either bread rolls with a hole in them or stale due to sitting on a supermarket shelf for a week!
I can only imagine how frustrating it must be not being able to eat certain things. You sound like you go through an awful lot with it too. I hope you get better soon and best of luck with the GP visit on Monday
