Please don’t think me condescending to you dear readers in that I am including a recipe for a B.L.A.T.. I know a B.L.T. or B.L.A.T. is rather self explanatory. One things I find cookbooks or food blogs good at is reminding you of things that you haven’t had for a while and want to eat again. You don’t necessarily need the instructions, just the inspiration or the idea.
I did add a bit to the Bacon, Lettuce, Avocado and Tomato with the condiments. Indeed I added a little Harissa, spread very thinly for some chili zing and some smooth real mayo for creaminess. I also gave it some spanish onion and another type of tomato, the sun dried variety which is one of those foods I could never get sick of. I would have put in some sexy baby spinach leaves but they’re a rare commodity in our house. You see, I confess that I tend to eat baby spinach like Popeye. So if it is there one day, it will be gone to next having been eaten by me.
B.L.A.T. for 2 hungry or 3 less hungry people
- 1 long (50-60cms) baguette, cut in half horizontally and warmed
- 1 small-medium avocado
- spanish onion thinly sliced
- 200g bacon, cooked until as crispy as you like it
- 2 large tomato
- 8 sun dried tomatoes
- Iceberg lettuce or baby spinach or green salad leaves of choice
1. Spread harissa and mayonnaise on one side of the baguette, spread avocado on the other
2. Time to lay the foundations: thinly layer some spanish onion (not too much), tomato and sun dried tomatoes. Then add bacon and finally add lettuce.
3. Cut into segments and serve (not I really did not need to include that instruction did I?
)

I quite like a BLAT if the B is still warm, otherwise I’d much rather have a HLAT or even a SLAT (salami)

oh, sun-dried tomatoes. the yin to my yang. i could (and do) eat them by the handful, so to me, they greatly improve every meal they touch.

Looks great! Mmm, YUMMM! Though I’m a sucker for cheese in rolls like this (& white pepper).. and definitely iceberg lettuce (like you’ve featured). I’ve heard of chefs giving the old iceberg a horrible lashing, denouncing it in ways only reseved for supermarket brand mayo. But I can’t agree. I enjoy my gourmet lettuce mixes.. with my two fav’s being rocket and baby spinach –but there is always a time and a place for iceberg in my opinion. It has its own character, regardless of any nutrient deficiencies and high water content.

Hi Maria-Yep white pepper is great in sandwiches. I prefer it to black pepper really. I know iceberg is supposed to be less exciting but I love the crunch of it. You’re the same as me, I love rocket and baby spinach, I could gobble up bags of baby spinach if I had it-haha perhaps I have a deficiency that I’m not aware of

I think it’s kinda funny how you go through bags of baby spinach if you have some in the fridge. I guess it’s much better than munching your way through bags of peanuts or something with a high fat content! It’s so good for you, you should eat a bag at least once a week!
