I have a recipe for chestnut ice cream from Maison du Chocolate, and it calls for marron glaces-and at waaaay too much a can, I&#039;d rather slave for four days to make my own! I&#039;m the guy who once made Maida Heatter&#039;s eight hour cheese cake, so a 4 day recipe??? No biggie :-)</description>

The maron glaces look wonderful.  I never realised that they were made by absorption of syrup.  Now that&#039;s interesting!  I may have to give these a try in winter.</description>
