The slightly eccentric eating, cooking and travel adventures of a Sydney girl who loves cakes, cooking, Nigella Lawson and eating. She eats, breathes and dreams food and indeed will never get cable TV as she'd quit working and watch the Food Channel all day long.

[...] We both get a serve of the barramundi dish which we figure is the start of the mains. One thing we noticed is that the mains seems a bit safer than the experimental entrees and whilst this is skillfully prepared, we were both thoroughly enjoying the experimentalism of the entrees. The barramundi has a gorgeously crispy skin, a butternut squash puree, a small thimble sized piece of roast pumpkin covered with roasted nutty pumpkin seeds. And the pressed cucumber is interesting-we were both wondering what pressed cucumber was and do you know what it is? It’s a doppelganger for my mum’s cucumber pickle recipe (sans chilli)!
With a glut of Giant Russian cucumbers (really) I started searching the web this weekend to see if I could find some pickling recipes, came across this one, and because it looked both easy and delicious (I'm a complete pickling novice, this was my first attempt!), I gave it a go. They smell delicious, but I wanted to know: Should they sit in the jar for a certain period of time before eating them, and how long do they keep? I don't want to ruin them by leaving them too long or too little!

Cheers!

Not particularly elegant presentation-wise, but very tasty...

In reply to Jilian, these are not preserved - you are correct, they need to be boiled. Then I wonder how to do this as they are cold from being in the fridge. If you put cold jars into hot water lots of bad things can happen. I think if you let the jars warm up to room temp it should be ok to bathe them, and still not ruin the cucumbers. I did not have enough jars to bother preserving ! LOL.... I will let you know if I try it :)

Hi Jillian-Thankyou! Hmm I don't know if they're technically preserved. To be honest they disappear really quickly in our household! :o

Hi EMT Karen-Thankyou very much and thanks for letting me know! I appreciate it :D
