Two days ago, my girlfriend and I printed off the vouchers we received for joining the Mumu mailing list and headed off for a Saturday lunch. Before being seated we asked whether we could use the vouchers and it was explained that only one could be used per visit – fair enough! Unfortunately, when it came to paying the bill we were told that we couldn’t any vouchers because we had ordered the “Grass Fed Special” (a set menu including bread and dips, sirloin steak with mash, a glass of wine and a coffee) from the lunch specials menu. We were absolutely shocked to find out that the staff were claiming that by ordering an item from the lunch specials menu that we had somehow made the most of “promotion” and therefore could not use the voucher. Although we had enjoyed the food and had already spoken of returning, this nasty surprise completely ruined the experience.

We were told to save our coupon for next time – I wish I had thought of saying that there wouldn’t be a next time.....</description>

Veal jus ( which we make over 3 days but people can buy) 1l

Sawn bones with marrow exposed 2kg

Parsley 1/2 bunch chopped

Salt

Pepper

EVO

Roast bones in hot oven with evo and seasoning until bones brown slightly and marrow is soft to the touch.

Remove marrow ( I let it cool and use gloves)

Add chopped pasley and blend in food processor to mayonnaise consistency.

Boil veal jus and add Bone Marrow puree to taste (I added it all) whisking as you go. (p.s whisk before serving)

We made a red wine sauce first then added the marrow.

Red Wine sauce ( my qtty)

Caramelize some sugar ½ cup using water on the bottom of a pan. Wait until it is a nice caramel colour then add red wine 7Litres.

Reduce by half then top up with veal jus.
