		<description>Great blog and pics.  Ive done some research on pommes robuchon.   I have his complete robuchon book, it lists the same recipe as above.  However, every french chef I talk to, and many internet recipes, call for equal parts butter and potato.  Why?  Can only Robuchon make them taste so good, does he modify this recipe with more fat in his restaurants?  Do avg chefs overdo it with the butter?  Im curious what others think.</description>
