Slothful Sundays: Coconut Lace Pancakes with White Nectarine, Nashi Pear & Ginger Salad

I received the Masterchef cookbook quite a while back and had yet to crack it open. The recipe that I had been anticipating sadly wasn’t there (Poh’s deep fried meringues) but I did see some dishes that I really wanted to cook. I wanted to make these lace pancakes as I adore pancakes in every shape and form and these to me were quite unusual and I was intrigued about their texture.

Poh’s recipe called for it to be served with Chicken rendang and whilst I’m in full support of rendang for breakfast or brunch I didn’t want to deal with making a rendang at the delicate hour of 11am on a Sunday. Don’t get me wrong, if I had some from the night before I would have happily hoed into it with gusto. Leftovers are what get me up in the morning quite honestly. I once knew a girl who proclaimed that she was fervently anti leftovers and each night she threw out whatever wasn’t eaten. I was aghast, ok some things don’t keep (although I’ll give everything a try) but I thought it was not only wasteful but more importantly, you were depriving yourself of an encore of the dish you had the night before.

Some foods are rather good cold too (one exception comes to mind: rice which hardens although it is ok if it has a curry on it) and nothing delights me more than opening up the fridge the next morning and eating the leftovers for lunch. Dare I give you evidence of such next day deliciousness -  pizza and fried chicken which even Nigella herself adores cold.

Back to these coconut lace pancakes. They may look a bit fiddly but they are easy to make and take about a minute per pancake to cook once your pan is fully heated. It’s ideal for those that find pancakes perhaps a little on the heavy side as they’re very light. I paired it with a healthy fruit salad with white nectarines and nashi pear and flavoured with honey and ginger which Mr NQN wolfed down and them came back and then hoovered down seconds. I preferred it with some leftover dahl which I had in the fridge. The texture is delicate and light and it is ideal for those who find a pancake breakfast a little too heavy. It also goes well with almost anything like smoked salmon, ham, anything you have. I’d probably call these the leftover pancakes, that is, the pancakes that go well with just about anything, including leftovers from the night before.

Coconut Lace Pancakes

Adapted from the Masterchef Cookbook

Makes approximately 12 pancakes

For Pancakes

  • 3/4 cup (105g) plain flour
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 3 eggs
  • 3/4 cup (180ml) coconut milk
  • oil to grease pan for frying

For White Nectarine & Nashi Pear Salad

  • 4 white nectarines cut into small pieces
  • 1 large nashi pear cut into batons
  • 2 tablespoons honey
  • 1/2 teaspoon ginger finely diced

1. Whisk flour, salt, sugar and eggs in a large jug until smooth. Add coconut milk and whisk until the consistency is like that of a pouring cream. Sieve the mixture through a fine sieve. Make a pouring vessel for the batter by cutting a 3mm diameter corner off a small, clean milk or cream carton. If the hole is too small the mixture will not pass through smoothly, if too large, it will pour too quickly resulting in thick pancakes and not the thin lace textured ones pictured. Pour batter into the milk carton.

2. Heat the frypan and add some oil to grease. Pour two circles around the outside to help hold it all together and then in a tight zig zag pattern motion pour a thin stream  from one side of the pan to the other reaching the outer circles. Repeat at a right angle so that you form a cross hatch pattern.

3. When the inside appears to be lightly browning, with a thin eggflip, pick up the corner and then flip over the pancake carefully (it will be delicate) to cook on the other side for just a few seconds. Then fold it over and place on a plate to coll slightly where you can then fold it once more into quarters.

    That girl is silly! So many dishes improve with time… *shakes head* And that’s so disappointing about the lack of the deep-friend meringue recipe… though maybe she’s saving it for her own cookbook?

    I’m one of those people who stays away from pancakes because even one seems to inflate uncomfortably in my stomach, but these look like a far safer bet! I’m definitely a sweet person for pancakes though – maple syrup or lemon and sugar, please! :)

    Aaah, roti jala, how do I love thee? Always with something savoury, usually a curry (preferably Kapitan chicken). These are traditionally made using a cup with holes in the bottom, swirling the lines of batter over the hot pan. Thanks for the recipe – I’ve never tried to make these at home, but I will now! :)

    Pancakes can be consumed anytime of day for me, depending on what’s sitting alongside. And I know someone who’s anti-leftovers too! A nurse I used to work with who would habitually clear out the work fridge – sometimes someone’s poor lunch for the day would get turfed after being mistaken as unsafe to consume…

    In my house we almost always eat a meal twice – if you make good food people are happy to eat it two nights in a row and cooking less often helps me to keep loving it :) I like sweet toppings on my pancakes but I hardly ever make them, preferring french toast. I have one piece with salt, pepper and bacon, and the next with maple syrup. A main and dessert at breakfast time ;)

    Hmmm..the pancakes look pleasing to the eye, but as I have never had a problem with pancakes being “too heavy” I would probably need to eat ten of these! As for left-overs, I am from the Nigella school of thought, and can happily eat straight from the fridge…but of course I am probably not as elegant as she.

    The family all loved them though and gave a resounding yummy!!
    When I do eat them , I can work my way through 4-5 with oodles of pure Canadian maple syrup and fresh whipped cream! Definitely a sweeeeeeeeet tooth!

    Oh my – we even have a specific name for leftovers in our house: YMCA’s (Yesterday’s Meal Cooked Again).
    Stir fries are great made into Chinese omelettes, tacos turn into nachos for the next night, and leftover pasta meals make great frittatas. Even take away pizza is great the next day – you scrape off the toppings, add a little extra cheese, and put it all into an omelette. Yummo!
    Easy peasy, and so budget friendly.

    I’m sitting here eating leftover pot pie from last night’s dinner. I love leftovers – they are great on sandwiches if needs be, and the flavours are so much better the next day.

    My favourite is lasagne. It is so good cold. I take it to picnics and people think I’m weird until they try it and then it’s like a cold noodle salad but with punch!

    haha, good to see you used Poh’s ad hoc technique in making the lace pancakes too! I prefer the sweet and savoury together as in bacon and maple syrup and anything else you can think of adding, love your combo of nectarine, nashi and ginger, what a perfect summer taste!

    I love pancakes and this recipe looks wonderful. My husband made pancakes this morning with Bisquick, he drained and put into the batter a container of Dole diced peaches. Maple Syrup was our topping. YUM. Just to let you know, we are having a stuffed barbecued turkey tonight and making soup tomorrow. I forget that it is tomorrow there already, as I click on the button to post this comment it is 5:15 pm on Saturday in beautiful Northern California.

    How about using one of those squeeze bottles? This is a fantastic idea and one I really will try this week. I’m one who doesn’t like heavy pancakes and looks forward to left overs with passion. This morning I had spicy shrimp and bread, left over (for pictures) and I almost didn’t get a good picture for eating the shrimp. You come up with the coolest things on this blog.

    What a refreshing combination! I also attempted a similar recipe last month. But because I didn’t have any empty milk carton lying around, I drilled three holes in a soft plastic container and use it as a mould. Works just as fine!

    That said, I have always eaten these lace pancakes (roti jala) with curry, and have never thought or pairing it with something else. I think they normally put some tumeric in these back home as they are always wonderfully yellow. :)

    That looks just brilliant! In Malaysia, we have a savoury pancake that is ‘laced’ (never quite thought about it that way till now!) and rolled up. Its eaten with chook curry or other curries and looks a bit like your pancake. Happy Belated Australia Day!!

    i like both savory and sweet pancakes. the best pancakes i have ever had in were in amsterdam – both the small puffy kind (poffertjes) and then the large flat crepe like ones with savory fillings.

    These are so pretty and delicate! I love how they’re lighter than regular pancakes (I LOVE regular pancakes but can only eat one or two before feeling like I’ve ingested a full 5-course meal)…this means I could eat more, lol! I like both sweet and savory toppings, but my all-time favorite pancake topping is sauteed fresh cherries.

    What quaint little pancakes. I love them. These would be perfect for a kitchen tea, baby shower or champagne breakfast with mum and the girls.

    I wonder if a gluten free version will work.

    Re: Topping – mmm it’s a hard choice, I love avocado, ham and cheese, but can’t really go past strawberries and nutella or bananna, dulce de leche and whipped cream.

    I’ve been wanting to try these myself!! They look great! if you want a recipe for the fried meringues – email me. It used to be a common north china dessert, fried meringues with a red bean filling. Most restaurants dont like to serve it now as its too fussy to make.
