Stephanie Alexander has a recipe in her Cook&#039;s Companion that calls for just eggs, custard powder and tartar powder, sugar; no flour! So a flourless sponge cake.

I made it for the first time the other day with success; using chicken eggs.

I love duck eggs. We had pet ducks as children and the eggs made beauitful cakes; mum always raved at how much better her baking was with the duck&#039;s eggs. Luckily my aunt has homed my brother&#039;s pet duck, and we still get them from time to time!
