Win 1 of 3 Copies of Bill’s Basics by Bill Granger!

One of my very favourite recipes is a Bill Granger one. It’s his recipe for Portuguese custard tarts which is so easy and foolproof that it’s a pleasure to make. It is also one of the most requested items and every year my father requests a batch for Christmas, his birthday and Father’s Day and it’s so easy that I’m happy to oblige. And ever since trying that first Portuguese custard tart recipe I tried more of Bill’s recipes and have found them very easy to follow and very simple. So when he brought out a new hard cover cookbook called Bill’s Basics I was eager to have a peek inside.

He tells us in the foreward that it is a collection of his personal favourites and simple classics. The photography is simple, I suppose in tune with the book’s philosophy and dishes are propped on a kitchen bench or  teatowel, top down or very closeup shots (they actually remind me of a lot of food blog photos). And he gives recipes for basics such as chai tea, pancakes, tomato sauce but he also throws in his very good chocolate chip and pecan cookies and home made Eggs Benedict including making your own English muffins (if you were that way inclined!). And because Bill writes for a modern Australian palate there are also Asian recipes like tom yum, laksa, baked orecchiette with sausage and cavalo nero and the omnipresent salt and pepper squid. It is ideal for beginners or people moving out of home or people that want non fussy and uncomplicated meals.

    Although I am not eligible I did want to say that Bill Granger is a genius. I have all of his cookbooks and they are not only wonderful for recipes but also for just reading. He is very generous with the recipes he shares. His restaurants are also wonderful. I am jealous of the winners in advance :)

    Hi NQN, I have to agree that when I’m looking for something simple, I turn to Bill. My simple and tasty ‘go to’ meal would have to be spaghetti with aglio, olio and peproncino (garlic, olive oil and chilli) with an anchovy or two thrown in.

    My favourite simple and tasty meal is actually a Chilli Beef and Spinach stirfry which we had the other night. Quick, simple, tasty and depending on the chilli packs a punch! We had it for dinner the other night!! mmmmm

    I love Bill – both his restaurants and his books! If I won this I’d give it to my Mum – she’s the ultimate Bill fan!

    My favourite simple but tasty meal is corn fritters served with avocado salsa and bacon. You can eat it at any time of the day, it’s absolutely delicious and it’s fast to make!

    Pasta Puttanesca is the simpliest and tastiest meal to whip up in minutes. I always have the ingredients in my pantry (pasta, anchovies, capers, olives & fresh or canned tomatoes) thrown in a frypan with some olive oil and garlic.

    Bill’s Scrambled Eggs – with a bit of practice, and the courage to cook then hot and fast you can make them just like Bill did when he first opened in Darlinghurst. Smooth, silky, and the start of of a gourmet day.

    OMG I so want this – I was reading it yesterday at work (in a bookshop) and it was so good!

    Favourite simple but tasty meal? Tofu, vegie and noodle stirfry with sweet chilli sauce. It has to have every vegetable under the sun – cauliflower, carrot, broccoli, zucchini, capsicum, EVERYTHING IN THE FRIDGE. It takes a while to chop everything up, but it totally rocks and makes life so worth living after a hard day. Best chased up with a Classic Magnum.

    Favorite simple meal … anything someone else makes. Seriously though, meat, whatever veg in the fridge stir fried with a light asian sauce served on udon noodles.

    I love Bill Granger’s books, especially becaue as you say they are simply styled and you believe that you can do it yourself. My favourite simple meal is a stir fry – make the pan hot, slosh in a little canola oil til it sizzles, brown your onions, garlic and ginger, then your meat, toss in some crispy veges of your choosing and some hokkein or udon noodles, pour on your favourite sauce,add a dash of lime, give it all a stir, and voila – dinner is served.

    Oooh, I love Bill too. I haven’t made the Portuguese tarts yet, but after reading your post I’m determined to make them for Xmas lunch with friends!
    There are 2 recipes in our house that my daughter asks me to cook all the time. And luckily enough they are very easy to make. The first one is Fried Rice, but very simplistic one: only green shalots & egg (and soy sauce). The second one is spagetti with proscuitto, lemon zest, cherry tomatoes and capers. She can’t get enough of that! Sometimes I add rocket as well, sometimes parsley.

    My favourite meal is actually from “Feed Me Now”, another Bill Granger cookbook! Its stir-fried rice noodles with chicken and snake beans. Quick, easy and tasty, everyone in my house loves it, and I’d love the chance to try some more of his recipes.

    I absolutely love my Vegie and four-bean soup, which you essentially throw together in addition to tomato paste and a bit of cornflour and water (extra spices as desired!) A great heart soup which can also be eaten cold, and a respectable replacement for baked beans in the morning with fresh, crusty toast. Ok, so not a Bill Granger recipe, but I love it!
    I recently bought this book for someone for Christmas. Funny how you end up buying others what you want!

    I put angel hair pasta on the boil and take the two minutes to fry off some semi dried tomatoes and chopped chilli in a little bit of oil. Drain the pasta, toss it through the tomato/chilli mix and top with shaved parmesan. Incredibly simple and easy but also yummy.

    Yum you had me at Portugese custard tarts – one of my favourites. I dont think you can ever go wrong with a home made lasagne as a simple tasty meal at any time – after work dinner or shared with friends. Has to be accompanied by garlic bread and a nice red of course.

    The first idea which comess to mind: Chicken thigh fillets marinated in my own teriyaki type mix, then grilled to juicy perfection. Served on brown rice mixed thru” with a handful of herbs and toasted pinenuts alongside a simple green salad. Summer fruits ‘arrangee’ on a pretty platter with lemon gelato or homemade vanilla yogurt. Glass of white next to the plate, of course! Oh, I have loved Bill G’s recipes from day dot, and am not just saying this hoping to get the book!!

    I love making burgers at home. Its so simple~! I love making beef burgers with wholegrain mustard and lettucs, tomatoes, cheese etc. I love it because it is so easy and you can make so many different combinations and flavours. :D

    My simple recipe that my now grown kids still ask for is my mothers handmedown sausage casserole ! I grew up with it, and so have my kids. Let me know if you would like the recipe! Even my son who has left home has it now in his collection ! Bill Grainger’s recipes are allways straightforward i have noticed, and once you read through it, easy to assemble and create!

    My simple but favourite meal is a corn souffle served with a fresh green salad washed down with a glass of crisp white wine. Heaven! Even though souffles sound daunting this one is as easy as whipping up an omelette.

    I’d really love one of these cookbooks because i love learning really basic recipes. my favourite simple dish is oven baked fish. simply place fillet of fish in foil with squeeze of lemon, knob of butter, a bit of salt and white pepper. wrap up and cook in the oven at 180 degrees for around 15 mins. done. serve with a sprinkling of chopped parsley or chives on top and favourite veges on the side — like green beans :-)

    my favourite but tasty meal is a perfectly cooked (rare) piece of steak, smothered with grain mustard and after its sat for at least 20 minutes its sliced thinly and served on a bed of fresh butter lettuce with some crusty bread and a few shaves of parmasen. yummo…. once a week at my house :)

    My absolute favourite meal is loved so much in my house BECAUSE it’s so simple yet tasty. It’s a korean ox tail braise, and it’s eaten at least once a week. It’s just that tingle of warmth you get down your neck when you rip apart the rich, gelatinous meat from the bone. Yes, it is also extremely messy to eat…

    I would have to say French crepes. We had a French au pair when the kids were young and I was working full time, and she taught us her own recipe. It’s so easy even the kids can make them. They love helping to chop fillings and mix and match their own ingredients. Plus, you can use the crepes for savoury main course AND dessert. For the win!

    Love Bill and as you say his recipes are easy to follow and they taste fab- fave quick recipe- Pastiec-I usually make in a lamington tin so it’s easy just slice and serve rather than making individual ones – a layer of Pastry covered with diced lamb, onion, potatoe and sprinkle with parsley and a little salt- cover with another layer of pastry then bake until golden-This was my mums recipe and I am continually getting asked to make it.

    I would love to win Bill Granger’s “Bill’s Classic” book. Here’s an easy, tasty dish you can use as a hot or cold dip, an accompaniment, or as a meal with salad: Artichoke Dip (french origins),
    1 can of artichoke hearts, washed, squeezed and finely chopped. To that, mix in a finely chopped garlic, 3 tablespoons whole egg mayonnaise (not low fat mayo!!), 1/3 cup grated parmesan, salt, pepper and paprika. Mix well, place in buttered baking dish and sprinkle with extra paprika and parmesan. Bake for 20 minutes. Serve warm or cold. Tastes even better the next day!

    Bill’s Sydney Food is the defining classic of all that is glorious about food here and one of my favourite cookbooks! My favourite simple meal is sourdough and butter with a not too salty ham in the middle and mustard and either marmalade or honey to go on top of the ham, delish!

    My favourite simple and tasty meal is: Courgette (Zucchini) fritters. Coarsely grated courgettes, eggs, tiny bit of flour, coriander, chopped chilli and grated whatever cheese is around in the fridge. Serve with a garlicky yoghurt dipping sauce. Yum, even for courgette haters its a winner.

    Bill Granger is one of my all-time favourite cookbook writers! His recipes for pavlovas, chocchip cookies, coconut bread, chocolate french toast – all are delicious…
    But I must say my favourite simple but tasty meal would have to be soba noodles, with a dash of soy, mirin and sesame oil, and maybe a fried egg. I’ve got it all down so that I can complete the whole meal in less than 20 minutes :D

    Would love to own Bill’s book. My quick favourite is Salmon & Lemon Pasta… Anchovies, Garlic, tinned Salmon, parsley, lemon zest, mixed through Penne. Yummy and always have those ingredients. Dinner in 15 minutes.

    My favourite simple but tasty meal: I roast some pumpkin tossed in oil and some dried herbs, then caramelise some red onion in honey. Toss them with some pasta, feta and rocket!

    My go-to at the moment is a silverbeet, fried cauliflower, chickpea salad, which is a recipe from the Bodega boys featured in Gourmet Traveller. While salads are normally bo-ring, this one is so exciting and I actually feel good after demolishing a serving. Yum!

    Hi Lorraine,
    My hands-down favourite simple meal would be a basic homemade pesto served with Paesanella’s buffalo mozzarella atop some bread or penne pasta. It just can’t be beat and also goes well with whatever antipasto goodies you may have.

    My favourite basic recipe is for breakfast. It is my favourite meal of the day. My latest version of breakfast is two eggs poached in baked beans on rye toast. It is simple and has all the elements of a hot breakfast that I love. A winner in my books!!

    My ab fab simple recipe that I grew up with is an extremely tasty chicken soup(made of wings, onions, carrots, garlic and parsley) with semolina dumplings. In my family we called it “Ein gemachtes”. Never fails to deliver and always puts a smile on the faces of my family and guests.

    Have you seen the movie ‘Dinner Rush’? Picture the scene in which one of the chefs brings in the Italian sausage to cook something traditional for the owner, who is surrounded by his son’s “Nuovo Italiano” food but craves something real…the pan sizzles and you can almost smell the aromas…
    That scene has inspired a family favourite – pasta with sausage from AC Butchery, charred red capsicum and tomato.

    Good egg fettucini mixed with ricotta,chilli flakes and extra virgin olive oil makes a satisfying meal when one has little time to prepare.This is an authentic sicilian pasta recipe passed on to me by an old lady who made her own pasta AND ricotta. DELICIOUS.

    It’s actually Bill Granger’s scrambled eggs. I take the liberty of adding a little fetta cheese, and serve it on just out of the oven bread. It’s sooo satisfying.

    A crispy baked potato!

    With some shredded ham, coleslaw and melting cheese plonked on top. It largely cooks itself and contains all the necessary food groups in a one bowl meal! :)

    My favourite simple yet tasty meal – Soft boiled egg (egg yolk deliciously runny), buttery toasted soldiers for dipping and generous amounts of cracked pepper and sea salt.

    The simplest of meals, but so very satisfying!

    Although I love Bill Granger and have gone from eating 4 of Bourke Street Bakeries baked goods on to Bills in the next street and eaten again just because we were in Sydney and in the vicinity and from out of town! – I want to win this copy for my sister who totally loves him. Our favourite family meal is a dutch one from our childhood of a saurkraut smoked sausage casserole layered with mashed potatoes topped with crispy bacon. Sounds weird but I think even Bill would love it if we ever got a chance to make it for him!

    My all time favourite quick meal is a pasta dish with a tomato anchovy sauce – the anchovies are for taste only so you don’t know they are in there even though I love anchovies on fresh bread but hey that’s another meal. 1 crushed garlic clove, 2 tbs olive oil, 2-4 anchovy fillets – place in a large frypan and sautee over moderate heat, once anchovies have melted away add some finely chopped fresh tomatoes/cherry tomatoes etc. stir well and bring to a simmer – add cooked spaghetti to the pan and mix well sprinkle with chopped fresh parsley and freshly ground black pepper.

    Bacon and egg pies for breakfast. So easy and and feed a group of hungry people very easy. Bacon, egg, cheese, mustard and puff pastry. Yum. When all the guys come over I used to have to cook like a kg of bacon and a couple of dozen eggs. But 2 pies each and they are happy fellows. It isn’t one of Bill’s recipes but one of Donna Hays. One of my fave Bill’s recipes is a chiili prawns on the BBQ. A BBQ standard in our house now. Easy and Simple and taste…Yum

    My favourite would have to be Vietnamese summer rolls. At home, we just bang the roast pork into the oven for crispy pork crackling and wash a range of fresh vegetables and herbs and we also make our own peanut sauce. It has minimal cooking but it’s so healthy and tasty!

    I made bill granger’s ricotta hotcakes at home the other day and they were delicious!

    My all time favourite simple meal is long peppers stuffed with a little feta, drizzled with some olive oil, sprinkled with oregano and baked with cherry tomatoes. Served with crusty bread – heaven.

    I LOVE all of Bill’s books and some of his recipes are in our ‘everyday’ list of dinners. Particularly ‘Caramel Salmon’ which we have bastardised /changed to marinated cubes in soy, ginger, garlic, brown sugar and whitewine. Grill under grill until a bit blackened and serve with rice and greens with sesame oil. YUM!

    Hhmmmm….I think that it would have to be pasta carbonara. I have made it in a restaurant kitchen, and also on a camp stove. I have made it sober, and also whilst quite ‘tired and emotional’. I have added broccoli and meat substitute for vegetarians, and have used bacon, pancetta and salami for meat lovers. It is the perfect all-round dish, it is healthy, and, as it is a very forgiving dish, it delivers on taste and on time, every time. :)

    For a newly married couple who never really cooked, but with a husband who is a analyst so he can follow recipes well, Bill was the first cookbooks we bought since we loved his cafes. One of the first recipes that we wanted to get right was his scrambed eggs! Simple yet delicious! we get creative by changing up what we have on the sides like grilled mushrooms, avocado, prosuitto etc!

    I do have a fairly extensive collection of simple family favourites, to pick just one is extremely tricky but the men in my family have no such dilemmas – Spaghetti Carbonara (Sunday night or perhaps Friday night favourites).

    As far as Bill Granger goes, I alas only have four of his cookbooks so would be absolutely delighted to add “Bill’s Basics” to my collection.

    Pasta with broccoli. I cook my broccoli in sLted boiling water. Once the broccoli changes to a vivid green in colour, I remove the florets with a slotted spoon, and use the same water to cook my pasta. in the meantime, I fry up fresh breadcrumbs with oil s&p, garlic until breadcrumbs are golden brown. Once pasta is cooked and drained, I throw everything in the frypan with the breadcrumbs and toss everything together, adding grated cheese such Parmesan. Then serve. That’s my fav easy meal.

    Hey! A nice simple meal would be the ultimate comfort food for me :) . just a simple mash with some caramelised onion and bacon, creamy butter and a touch of salt – then the surface swirled around, sprinkle parmesan cheese and put under the grill for 10 mins until nice and brown with a slightly crunchy surface!

    My favourite simple and tasty meal is my version of a thai larb – minced pork cooked in chilli oil, fish sauce,palm sugar and plenty of thai basil. Mix with finely chopped onion, cucumber and lettuce leaves before serving with a side of rice and a squeeze of lemon.

    my all time favourite simple meal is frsh figs (preferably just picked off the tree)with gorgonzola. when i was working as a nanny in italy the family’s summer house had an enormous fig tree in the courtyard and there was always a big chunk of gorgonzola in the fridge. heaven!!! i have 3 of bill’s books so far but have been eyeing off his new one since it came out!

    Gosh I have to just list one??? Hrmm I would have to say parmesan chicken (chicken breast cut into slices and cringed in a breadcrumb, olive oil, garlic, parsley, lemon and Parmesan mixture) baked in the oven Ruth smooth mash and blanched green beans. That feeds all family members !

    Just give me some cooked prawns, homemade cocktail sauce and lettuce! Guess that’s my inner 80s child calling out!!

    My favourite simple meal would be a Donna hay recipe that I always use for red wine vinegar, paprika and garlic roast chicken. It is so simple and easy. I love that I can put it in the oven and know that it will turn out without fail 45 minutes later

    I love Bill Granger too – he seems so friendly and personable when i’ve seen him on tv, such as when he was on Poh’s Kitchen.& the double chocolate pancakes – drool indeed!!
    One of my favourite simple and tasty meals would be chicken mango salad with a pomegranate molasses dressing – that dressing makes everything great!

    Can’t get much simpler and tastier than this carbonara…
    Boil fettucini, fry up onion garlic and bacon with a bit of salt and plenty of pepper, mix them together and immediately crack in an egg or two, mix it up and there you have it. Simple and delicious

    Unnamed pasta combination of:

    Garlic
    Chilli
    Prawns
    Lemon zest and a bit of juice
    White wine
    Flat leaf parsley
    Good quality olive oil

    Takes less than 10 minutes and it’s delicious with some parmesan on top!!

    I don’t know a lot about Bill Granger, but I’m certainly going to check out this book, all the recipes you mentioned sound divine. I could use another cook book with practical everyday recipes. My favourite tasty and easy recipe is pasta with salmon. Whilst the pasta is cooking, I put a can of tinned red salmon in a frying pan and season, add some cream and dill and then when the pasta is ready, drain and add to the sauce. Mix through and you’re done! You can add some vegies into the sauce if you’re inclined, baby spinach and mushrooms work well.

    Crispy skin salmon with an Asian style dressing. Bill does one with a sweet chilli dressing and I also do another dressing with simpler Japanese flavours of miso, sesame oil, rice vinegar and sugar. Served with udon noodles its quick and delicious.
    Maggie Beer does a similar crisp skin salmon with a pea salsa using frozen peas which is delicious too

    For those like me who live in the country and without ready access to fishmongers, salmon fillets freeze really well and defrost quickly !

    I love Bill Granger’s books. I have two and turn to them all the time. His recipe that I do the most are the meat balls from Simply Bill. You cook them in the oven, I really dislike cooking meatballs in the fry pan.

    One of my favourite, quick, easy, and comforting dinners is something I call “Rach’s Omlettes”. Original, huh? Basically, take a 2 egg omlette (thanks to Nigella, I know how to make a delish omlette) and fill it with my South African inspired filling:

    cherry tomatoes
    capsicum
    mushrooms
    fresh basil and/or oregano

    Simply cook up the above ingredients. Make your omlette and once the top is starting to set, layer with cheese, ham, and avocado. Top with the capsicum mix, then slide onto a plate, folding in half. Top with a little extra filling and sprinkle with some extra fresh herbs.

    Simple, easy, tasty, and filling! Mmmm yum!

    my simple and tasty meal would be fried mihun (thin rice noodles). It’s incredibly versatile. I usually fry it with beansprouts, mushrooms and egg but it goes with anything, really. A good way to clean up your fridge. Vegan, vegetarian, or carnivore,it’s up to you. Just add some soy and oyster sauce,pepper and wholla!

    My fav simple meal would have to be baked salmon steak glazed with honey and white miso, on top of buckwheat noodles tossed with cashews, soy sauce, spring onions and garnished with sesame seeds. I’ve made this for parties of up to 15 people at my house and it only needs to be in the oven for 3-4 minutes! It’s a pretty foolproof dish too since you can eat salmon raw :D

    My grandma’s quiche! I make it user bit and pieces from the fridge (bacon, feta, pumpkin). I make three at a time, let it cool, cut into portions and freeze. Voila! Emergency dinner and work lunch :)

    My favourite simple but easy meal is salt and pepper tofu. I have a jar of the salt mix (white pepper, salt and chinese 5 spice mix) always in the cupboard and I most likely have tofu in the fridge and potato starch in the cupboard. It’s so easy to put together and so tasty. I’m sometimes guilty of eating a bowl of salt and pepper tofu for dinner when I’m only cooking for myself.

    I love Bill’s food! It’s so easy to make!
    Favourite easy meal is panfried salmon with loads of lemon juice, crushed ginger (it’s still ok from the jar!),chilli and pepper. Throw into the same pan some asparagus stalks (or broccoli) at the end and add a dash of soy sauce to the whole lot just before removing. Deglaze pan with some lemon juice and a touch of water. Cooked in 5 minutes and absolutely delicious! You can add some chopped green shallots/spring onions if you want to get fancy too!
    My favourite thing to bake is Bill’s Coconut Bread…my friends are addicted!

    Lovely and simple is my broccoli, chickpea and fetta salad. Cook small broccoli florets until bright green, stir through danish fetta, a couple of squeezes of lemon juice and a can of chickpeas – fetta melts beautifully from the heat of the broccoli.You can also add some canned salmon for an omega 3 hit!

    My favourite, simple & tasty meal of the moment is quesadillas.

    My husband and I were introduced to these recently when we went to Cabo in Mexico a few months ago – as a Mexican food lover I was surprised I had never eaten or made them before! Such a simple, tasty, healthy & FUN meal! And even better, my fussy husband loves them too. Having them for dinner tonight, the proper Mexican way!

    Also, Ive been lemming a Bill Granger book forever!!! Must check this one out, stat!!!

    My favourite dish is mushroom & chicken risotto. It’s beautiful and melting in your mouth and quite easy and fast to make. When I don’t have any chicken, I replace it with bacon/chorizo…whatever I have on hand.

    My favourite simple meal is definitely okonomiyaki. I only learned how to cook it this year and now make it regularly – as long as you have some cabbage handy it is so very simple to make and so completely delicious to eat.

    Now that I’ve mastered the art of pizza dough, I always keep some in the freezer and for an easy yummy meal, I make mini pizzas. I just throw on anything handy which is usually, tomato paste, mushrooms, grilled chicken breast, garlic, mini capsicum and basil(from my garden). Topped with plenty of cheese and pizza topper.

    They are always a favourite, look impressive but are super easy with hardly any washing up!

    I love anything with cabbage in it! Simmer shredded cabbage with canned tomatoes, chopped beef ribs, onion, grated apple, red chilli, vinegar and soy sauce. Leave to simmer and serve with mash – a perfect set and forget dinner!

    OMG!! I LOVE BILL!! but my favourite simple but tasty meal is spicy lamb wraps. the combination of lamb backstrap rolled in ground cumin and chilli flakes on a tortilla with baby spinach greek yogurt and fresh lemon juice. Best of all it is tasty simple and you have a completed dish in less than ten minutes.

    My favourite (very) simple meal is tuna steaks marinated in a mix of soy sauce, xiaoxing wine, sesame oil, garlic and honey. I fry it until browned on the outside and just cooked inside, then serve with rice noodles and vegetables. :)

    I love Bill Grangers philosophy of taking a few basic ingredients and turning it into something that thrills the tastebuds!This recipe is fit for a king but requires little preparation time or any amount of fussying in the kitchen.
    Ingredients:
    1 whole snapper scaled and gutted
    3 Spring onions sliced
    2 inches ginger sliced
    3 tlbs vegetable oil
    2 tlbs light soy sauce

    Method:
    Wrap snapper in foil and stuff with half of the spring onions and ginger. Cook in 200c oven for 25-30minutes or until cooked.
    Heat oil in a small saucepan add soy sauce. Transfer fish to a plate, place remaining onions and ginger on top then pour over oil and soy mixture. Serve with plain rice and steamed greens. Simply delicious!

    When I just want a simple delicious meal, I make a toasted sandwich. The most satisfying is made with bruschetta, 2 slices of cheddar, gherkins, dill, a poached egg, diced tomato, onion. When I pop it into my toaster maker, it flattens all the sides, making the centre really explosive. like an instant pastie.

    My favourite and most often prepared dish by Bill is his Beef with Soy and Mirin, published in “Holiday.” Bill writes that this recipe got him through a Japanese winter as a very young man! It has gotten me through many evenings, too! Simple – in the best sense of the word and a favourite with all who have eaten it. Bravo Bill!

    Smoked Trout with Potato Salad qualifies for simple but tasty in my house. What could be easier than steaming some Kipflers and mixing them with a dressing of Olive Oil, Lemon Juice, vinegar, garlic, salt, pepper, herbs (Parsley and Mint), celery, capers and shallots and throwing it into a bowl with flaked smoked Rainbow Trout? Top with a dollop of Lemon Mayo and you’ll think you’re in heaven and won’t even have broken a sweat! Now that’s my kind of cookin’. The recipe comes from Bill Grainger’s “Sydney Food”.

    Stuffed mushrooms! Simple and oh-so-satisfying. Combine fresh ricotta, sun kissed tomatoes, kalamatta olives, freshly picked herbs (oregano & parsely) and an organic egg. Fill mushrooms and bake in the oven until golden. Incredible.

    I just made a prawn omelette. So easy. New favourite.
    Fried up some frozen prawns from Aldi with a litte garlic, then added a (REALLY) beaten egg and a little cheese. Drizzled an itty bit of sweet chilli sauce over the top when done and Viola! Ten minutes and compliments all round!

    While a pot of spaghetti is cooking, Ava(age 4) and I pick cherry tomatoes and basil from the garden. She tears the basil, I chop the tomatoes in half, we throw them into the drained pasta with a dash of lovely Margaret River olive oil and a little cracked pepper and voila…dinner. It takes me an extra 30 seconds to pour a glass of wine!

    Since seeing Bill prepare scrambled eggs years ago when he was just starting out on TV, I haven’t looked back. Who would have thought by simply pulling back to the middle, a simple scramble or omelette could taste THAT much different, and the texture. awesome. So, to 2 eggs I add a good pour of mung bean sprouts, 1 finely chopped roma tomato, a pinch each of oregano and parsley, season and yum. A slice of toasted rye sourdough with caraway is preferred.

    Porridge for me!

    I love the homely smell as it bubbles away on the stove and then i slather it in milk, honey and cinnamon.

    One of favourite books when i was a kid was ‘The Magic Porridge Pot’ and even when i eat the stuff now it just makes me feel like i’m a gooey 5 year old again, it’s awesome.

    My favourite really lazy meal is creamy baked pork chops. Seriously, it is so easy it’s ridiculous. You pan fry pork chops in some butter. Once browned, place in a baking dish. Pour a can of Campbells cream of chicken and mushroom on top with slices of onion. Season with salt and pepper. Bake @ 180 for 30-40mins – serve with rice. Yum!

    You can’t go past German Potato Soup, it is so simple and everyone loves it! All you need is potatoes sliced, water, bacon, spring onions, flour, butter, stock cubes and sour cream. Cook the bacon, spring onions, four, butter together then add boiling water and potatoes when these are cooked you take it off and let it cool then add the sour cream. So simple and easy, done within about half an hour or so.

    Spicy Prawns Snack
    1kg of Australian prawns with their tails on. Garlic, Lemongrass and Ginger. Marinate and BBQ. Yum! Served with a white wine!!

    A simple combo of chopped spinach,ricotta, diced bacon and mushrooms, parmesan and pine nuts mixed, pressed into a baking dish and baked till golden. Nothing but tasty and good for you :)

    Left over surprise.

    Growing up on a farm food was never wasted and on the odd occassion when the cupboard was almost bare mum would produce this scrumptous dinner.

    Left over mutton diced with any old vegetables diced…..a batter of flour water an egg and some curry powder….. mix altogether and shallow fry…….we were always left wanting more!

    Bubble and Squeak!!! An old fashioned favourite. You did all the work the night before. Left over vegies, butter, salt and pepper fried up. Delicious on a slice of toast.

    I really fast and tasty meals with 2 little angels and a foodie husband. So my quickest easy meal is meatball and vege pasta bake. I break some foodie rules and mix together precooked chicken meatballs ( I have sourced some REALLY tasty ones and I keep them in the freezer), frozen mixed vege (I know, I know) and pasta sauce (my own made and stored in the cupboard) and some home made pasta (that was made prior and again frozen). Into the oven with some cheese and breadcrumbs ontop and I can have a great meal on the table in 20 mins.. It is a hit here.

    Mums old fashioned sweet lamb curry. So quick to prepare and so tasty. A hit with my toddlers! It’s just floured diced lamb, curry powder, onion, garlic, tinned tomatoes, a generous dollop of fruit chutney, apple sauce and red jam with some stock, seasoning and a handful of sultanas. Throw it in the slow cooker and wa la, several hours later a melt in your mouth, delicious stew. Beautiful served with steamed rice and brocolli.

    Spaghetti Marinara is so quick, easy and delicious. I love seafood so I put in heaps- particularly prawns and calamari. It is also great reheated- I can’t resist eating it any time of day!

    My favorite dish has got to be this very simple Italian eggplant recipe. I love eggplants as they are always very easy to cook and serve. They absorb all the flavours served with the dish. The texture is nice and smooth, a perfect comfort food for any season as it simply melts in the mouth – you just can’t find fault with eggplants!

    Ingredients:
    1 large eggplant
    2 tbsp. extra-virgin olive oil
    1 can of tomato sauce
    1 tsp. fresh basil
    1 clove garlic
    ¼ cup parmesan cheese

    Pour olive oil into non-stick skillet and heat over high heat. While olive oil is heating, slice eggplant. Cut eggplant in half lengthwise, and then cut each half into very thin slices. When the olive oil is hot, add the eggplant. Sauté until lightly browned on both sides. Remove and drain.

    Preheat the oven to 350 degrees. Mix the tomato sauce, basil, and garlic together. Place half the eggplant in an 8 X 8 balking dish. Pour half the tomato sauce mixture over the eggplant. Repeat with the remaining eggplant and tomato sauce. Sprinkle parmesan cheese over he top. Bake for 20 minutes or until hot and bubbly.

    This dish can be served as a vegetarian main course with a side salad and a serving of crusty French bread for a complete meal.
