Win A Cooking Class For Two At Millfield Hall, Hunter Valley!

Mr NQN and I always try and find things to do that both of us like. This is hard as he loves sport and I don’t care a jot for it and I like cooking and he likes eating. But wait… there is something for both of us to do-cooking classes! And even a kitchen novice like Mr NQN loves learning how to cook new dishes-even his mother can’t believe it ;)

Just 2 hours’ drive north of Sydney in the Hunter Valley wine region, Millfield Hall is a historic community hall on the original convict trail. Lovingly restored as a family home the Provincial-style kitchen and living space is the heart of the hall and the huge covered deck overlooking the valley is the venue for year-round classes. From regional French and Tuscan cooking, to pizza making in the wood-fired oven, their classes are for anyone who wants to learn more about food and some great recipes that can make at home.

Upcoming classes will feature local Nulkaba ducks with confit legs and pan seared breast with a raspberry sauce; lamb shanks in roasted tomato and red wine with brussell sprouts and pancetta; ravioli pockets stuffed with rocket and pine nuts, potatoes dauphinois and green beans with almonds. Along with the 4 hour lesson from one of their range of chefs there is also an optional 1 hour specialist tuition from local providores and foodies and of course the 4 course feast that you’ve prepared along with a matching glass of wine with your meal and a complimentary apron. Doesn’t that make you hungry already?

    My favourite winter warmer dish would HAVE to be my mum’s beouf bourgignon with potato and cheese dumplings. They’re just the right amount of beautiful red wine sauce with tender chunks of beef, and the best part, the dumplings are seriously contended over. The very best on a cold night!

    The best winter warmer has to be a soup and has to have chilli in it…something like a Tom Ka Gai, lots of delicious punchy broth and chilli to make your nose run and clear your sinuses. Comforting and medicinal all in one :)

    My favourite winter warmer dish would be Vietnamese Pho. I love it as it reminds me of my mother’s cooking before i moved out. Occasionally, I would come over to my mothers house to eat some of her delicious heart warming Pho. I love the combination of punchy herbs and tender beef. It also gives me great memories of my trip to Vietnam. It reminds me of my grandmother because she had made the best Pho i have ever tasted. Before i moved out my mother would sometimes cater a huge pot of Pho so that my friends could come over and eat. They’re always so excited to be invited and eat all the contents of the bowl, slurping up all the delicious soup. It is my favourite ever winter warming dish.

    A wonderful Cassoulet with the perfect combination of smoked pork and juicy duck combined in white beans topped off with a Toulouse sausage. Enjoy!

    Well, I’m not ‘in it to win it’ because of distance and transport problems – but of winter-warming dishes I can think of quite a few! Anything with lamb shanks in a casserole form slowly cooked in the oven – of the soups a nice hearty minestrone, and, of course, always that favourite: osso buco – have you foodies noticed in how many publications the correct spelling is suddenly used? :D !     My favourite would be my mother’s beef casserole. I am cooking it now for my 8 month old and he loves it As much as I did growing up. My favorite part would be the carrots that take on such a sweet taste having been slow cooked in all the wonderful juices. Not only body warming on a winters day but soul warming for the loving memories it evokes.

    Pea ‘n Ham Soup, the smells permeating the house of it bubbling away as the ham falls of the bone and the split peas disintegrate. I can never wait until it’s cooked properly before i have a bowl or 2, and then for the rest of the week the pot sits ready to fill empty stomachs immediately.

    Definitely sticky date pudding smothered in sweet, rich butterscotch sauce. I love the way the pudding becomes even more moist as it absorbs the sauce. It reminds me of a European Christmas with mulled wine and snowflakes. Plus, it has fruit in it so it must be good for you ;-)

    My favorite winter warmer has to be onion soup… I love onions cooked any which way, and there is something so rich and cozy about curling up on a cold winter night with a bowl of onion soup and some crusty garlic gruyere bread to soak up. Hmmm… That reminds me, i might just need to buy extra onions for tonight…. Yum!

    Good old fashioned chicken pie with a flaky pastry lid,filled with yummy potatoes, leeks, peas and carrots in a rich, creamy sauce. Consumed in front of a cosy fire with a glass of Reisling. Heaven!!

    In the slow cooker, a lamb shoulder browned off in balsamic, add herbs, red wine, plenty of dates, a good stock,pumpkin pieces and a few assorted veg. Slowly does it for 6-7 hours , shred the lamb shoulder and drop spoonfuls of the thick rich ragout over a pile of pasta. Not only a warmer, but the house smells cosy all day long too!

    Bill Grainger’s Mushroom soup and chocolate self-saucing pudding (both out of ‘Bills food’). With the cold weather we’ve had in Sydney I’ve already done this combination three times this winter. Having soup for the main course magically takes away any guilt about the gorgeous desert.

    I know it’s not very inventive but I honestly love my mums’ Creamy Rice. I’ve had it since I was a child and I could forgo a meal to have this. It’s the winter comfort food I crave. The vanilla, cinnamon and milky rice fills me with warmth.

    Wow Lorraine, another extremely tantalising prize for your readers. I’d love to win and go to the Nulkaba duck cooking class, as I’ve never cooked duck before for fear of not getting it right and ruining a perfectly beautiful duck!
    As for my favourite Winter dish, I don’t think you can go past a home-made Chicken soup , using free range chicken. The smell wafts through the house and everyone waits excitedly for a bowl of piping hot soup with pieces of the shredded chicken, with or without croutons or better still made into a Stracciatella! :-)

    I know I’m the third person to say it, but it’s true-beef bourguignon! My recipe is from “bowl food” and oh my Lordy is it good!! Serve it with well mashed, creamy (& I mean cream not only in texture but in substance) buttery, well seasoned potatoes.

    What a fantastic prize. I have loved cooking for many years, I love eating and am always hungry, a bit light you after reading your blog. My favorite winter warmer is a beautiful lasagna pie. The recipe is from my grandmother and I just loved visiting her for the lovely meals she made us.

    The pie starts with the best meat sauce with red wine garlic fresh herbs and tomatoes, a layer of spinach creamed with a béchamel sauce flavored with a little nutmeg and Parmesan Cheese. This is all layered with finely textured pasta sheets and built up quite thickly in a deep dish. This is then encased in a beautiful puff pastry crust and baked till golden brown.

    Perfect with some crusty bread, a fresh tomato salad flavored with basil from the garden and a glass of wine. Bellisimo!

    A winter warmer for yourself and the whole house. Crock pot of rich pea and ham soup with a touch of chilli;lamb shanks in a Moroccan Stew done in a slow cooker;finish off with a warm fruit compote and a glass (or two) of steaming hot gluewein (not sure of the correct spelling but the taste is fantastic). When you come home the whole house is wonderfully cosy and warm and smells of a sumptuous warming feast. Keep up the good work Lorraine,wonderful site.

    Lots of lovely suggestions above, but I have to say that Grandma knew best….it would have to be roast pork with perfect crackling, apple sauce, crispy roast potatoes, sweet potato, parsnips and peas followed by steamed pudding and custard mmmmmmm (miss you Grandma).

    Oh my god, a cooking class for two? You mean… you mean it might not be just me cooking this winter?

    (Ah, I joke. It’s cold, my kitchen’s warm, and there’s some lovely chilled wine in the fridge. Like I’d be anywhere else!)

    My favourite winter dish sounds a bit odd – it’s a combination of stroganoff and bourguignon. I love it with beef, but it’s also good with chicken or veal. Dreadful with pork. Actually, I’d imagine it’d be even worse with fish, but it’s probably be a near-run thing.

    So. Grab a heavy-duty pan, toss some white wine in there with a little water, let it start bubbling away.

    Dice up an onion. Toss it in with the wine. It’ll pretty much poach in there, so you don’t need to worry about burning anything.

    Chop up your meat and mushrooms (or buy them pre-chopped. I like to imagine this was done by an army of tiny tiny elves, though this is rather unlikely). I use about 200 grams of each per person and always get leftovers.

    The onions should have bubbled down by now, so toss the meat in. Once it hits the pan the remaining wine will bubble like crazy. Give it a toss around for a minute to brown, add a good slug of red wine and then toss in the mushies.

    Once everything’s bubbling away, toss in another good slug of red wine, some diced garlic, a teaspoon or so of paprika and a good grind of pepper.

    If you have fresh herbs this is a great chance to show off and be all Nigella-ish, but if not don’t feel bad – just use the dried stuff. I’ve made this same dish with nothing but dry mixed herbs and it still turned out pretty tasty.

    Throw in a cup of water and give everything a good toss around, then let the lot bubble away for a couple of minutes before taking it down to a simmer. Pop a lid on the pan then walk away. Go take a bath. Take the rest of the wine with you.

    When you’re out of the bath and everything’s simmered down, stir in half a carton of sour cream, a tiny splash of balsamic vinegar and another grind of pepper.

    Serve on rice, pasta, veggies, or anything else you have lying around.

    mine is a family favourite, called crusty hotpot (the names doesn’t do the dish justice). It’s little meatballs cooked in a brown gravy with carrots, then it’s placed in a casserole dish and bread with cheese is placed over the top and it’s baked and golden and crusty. Goes well with mash and peas!

    My favourite winter warmer dish is the very tasty but simple beef stew I remember simmering away on the wood stove in our holiday cottage in the winter. Whenever I serve it, the childhood memories come too. Beef cubes, onion, carrots, potatoes, salt, pepper, water and parsley. Warm crusty bread not long out of the oven is perefct for soaking up the gravy…

    I know its a simple dish, but done well, its true comfort food. Shephards pie (or cottage pie). Use a mixture of veal and pork mince, once thats browned off remove it and add finely chopped carrots, celery and onion (oh and peas, capsicum and corn is a nice addition). Add some curry powder to taste, some tomato paste and a little cornflour and water to make a gravy, add the meat back in and simmer until your potatoes are cooked (cook potatoes in boiling water ready to make mash). No need to add milk to the mash – you want it fairly stiff – you can add a little butter if you feel indulgent. If the meat mixture is not tasty enough for you, add as stock cube (yes I know they are not very good for you full of salt – but sometimes they are called for). Put the mixture in pie dish and spread the mashed potato on top. Top with grated cheddar cheese and cook in oven for about 20 mins.

    True comfort food!!!!!!
    PS – I want that cooking class for my husband and I :) – it will force him to spend time with me in a kitchen instead of playing golf…….

    My favourite winter warmer dish is a toss up between a few of my mum’s dishes that she cooked regularly with me and my brother when we were growing up. Lasagne, chicken curry and beef and veg soup which was alwasy better when we were out at the farm and it was cooked on the open fire. Now I come to think about it a baked dinner in the camp oven is pretty damm good too, sitting around an oven fire watching the sun set over the mountains and the stars light up the sky which is truely magically out of town where there are no lights. The milky way is so bright that you dont even need a torch to see!

    To win this would be awesome my boyfriend is currently learning how to cook and this would be an awesome way for him to expand his skills!

    My favourite winter dish is lamb shanks in the slow cooker! The slow cooker is a welcome additon to my cold southern climate kitchen, and I have used several of those slow cooker base mix thingy’s that you can buy from the supermarket. Whilst i always add my own touches to them, I would love to learn how to make fabulously hearty slow cooked meals from scratch!

    For a family of dinner party start with ginger pumpkin squash soup served in small hollowed out pumpkins, followed by a slow cooked beef casserole containing celeriac, brussel sprouts, parsnips and cabbage which when cooked after about 3 hours put into individual serving casseroles which you can now buy. Top each one with a sweet potato biscuit. Everyone will be impressed and a mixed salad makes them feel better. Finish with Bartlett Pear Cobbler with blueberry crumble topping served with thick double cream or home made custard. Everyone is soooo full but this is such a delicious meal it is worth the effort and everyone groans with pleasure.

I’ve been trying to incorporate more pulses in my cooking at the moment, as they’ve so cheap, tasty and healthy.     One of the most delicious comfort food meals I have experiences was a traditional Maori Hangi on a cool winters evening served around a fire pit to ward of the chill with good company to share the experience with. Succulent earth oven baked pork,chicken and lamb that melted in my mouth and kumara,potato,pumpkin and cabbage that had retained their natural flavour in combination with a little smoky flavour from the oven!Wish I could revisit this experience!

Sooooo delicious and even better the next day, so be sure to make a double batch. Actually, doesn’t always mean there will be any left for the next day at all!!

    On cold winter nights I can’t go past cabbage rolls. It’s a favourite of the whole family’s, in fact my daughter has been nagging me to make them for the past few weeks.     Slow cooked Lamb Shanks, done simply with rosemary, garlic and homemade tomato relish bottled from the last of the Summer’s tomatoes. My boyfriend’s family are sheep farmers, and he always gave the shanks to the dogs – not any more! Melt in the mouth morsels of tender flavoursome meat with simple ingredients that fill the house with an intoxicating aroma. Mmmm makes me hungry just thinking about it! : )

    A variation on the ever popular stew which I use that I’ve found to be quite a hit is to use miso paste as the base for a thick and rich beef stew – packed with flavour and sweetness and surprisingly, not overly salty. Served over steamed rice or mash potato it warms not just the soul but also the house.

    The best dish is a Fettuccine alla puttanesca. It is salty, and spicy, which keeps you on your toes in winter. It has salty olives, anchovies,capers, spicy chill’s all in a beautiful tomato sauce. I add king green prawns to mine to give it some texture and heartiness for winter, but its usually a vegetarian dish.

    One of my families favourite winter warmer at the moment is tomato soup with totelinni sprinkled woth Parma and basil shredded. Ohh dont forget a warm garlic sourdough bagette.
