I’m not much of a thief, stealing hotel pens and slippers from nice establishments is about the extent of it. Last year Queen Viv and I drove through the town of Berry and knowing of the awesome reputation of the Berry Sourdough bakery I beseeched her to stop. And unlike Mr NQN who never stops as he knows that a stop means shopping and/or more food she readily agreed.

However when we got there it was some time into the evening and the place was dark. Except for one staff member. “Yoohoo!” Queen Viv said in her authoritative voice “Can we have a look inside?” He looked us both up and down and somehow decided that the two of us were less Thelma and Louise and more two curious and harmless individuals. He let us in and we took a look around and I made a mental note that I simply had to come back at some later stage. And that later stage happened to be over a year after.

The smiling waiter says that we can take a seat wherever we like and so we take one of the few tables left. Some have commented about the service at the cafe being rude but there’s nothing but smiles and courtesy for all of the customers (and if they read those reviews and improved on it then bravo to them). I watch a young boy holding a spoon in his mouth looking at the pastries with longing, his eyes as wide as saucers. We dither, the initial rumblings for the brioche French toast are quashed when the waitress tells us that they have sold out but we find another item that takes our fancy.

Sauteed mixed mushrooms on sourdough with roast garlic and lemon ricotta $16.50

I adore the mushrooms with creamy lemon ricotta spread on top of their wholewheat sourdough. There is an varied selection of exotic mushrooms along with Swiss browns, enoki, oyster and shiitake and it is generously portioned. The ricotta is wonderfully creamy like a good Paesanella ricotta and with a judicious amount of lemon and the bread, well it is pretty fabulous.

Even though I don’t follow a gluten free diet I know a lot of my darling readers do so when I got a review copy of the new Rowie Dillon book Indulge I wanted to make sure that I got some to give to readers too! You may know Rowie as the woman who started Rowie’s Cakes, a gluten free cake range. Well now she has a cookbook filled with one hundred gluten free recipes with sweet and savoury recipes including pasta, pastries, cakes as well as general breakfast, lunch and dinners. My favourite chapter would have to be the children’s party chapter which has some adorable ideas for your G.F. littl’un!

Apart from these recipes and every recipe has a photo (don’t we just love that?) there is a section on the science of flours to help explain each flour, where to buy it and when best to use it. There are pizza bases, pasta, a delicate feathery sponge and a delicious looking lime and coconut island cake and there were a range of pastry bases to choose from. As she says in her book “In cooking when you’re gluten intolerant, pastry, pies, pizza and pasta are the four Ps you generally skip” so I was most curious about these-stay tuned for some testing!

Curry In A Hurry: Palak Paneer from scratch in 15 Minutes

“Turn left!!” I tell my father from the back seat watching in horror as he turns right into the cross city tunnel taking us in the opposite direction that we want to. We are running late for our date with Chef Kumar the chef and owner of Aki’s and Abhi’s Indian restaurants. He is going to show my mother and I how to make a curry paste from scratch-or so we thought…

Escaping the tunnel and arriving at Aki’s breathless and panting we meet Kumar. “Cooking has to come from here (points to heart) and not here (points to his head)” says Kumar Mahadevan, chef and owner. Aki’s has just been given its first chef’s hat in the Sydney Morning Herald Good Food Guide Awards and is the only hatted Indian restaurant in Australia while Abhi’s, well that remains a perennial Inner West favourite packed every night including Monday nights.

I must admit that I don’t often make Indian food at home as I want to stay away from using bottled pastes and sauces as much as possible and yet I don’t often have the recipes to make my spice pastes from scratch. I invited my mother along as she is a keen curry maker so I knew that she would be interested in this.

Which brings me to my next point “I don’t believe in spice pastes” Kumar says. I look around. Hmm okay, I have come for a lesson on how to make my own Indian spice pastes and he doesn’t believe in them? He explains further that most spice pastes are meant for convenience but at his two restaurants, each sauce is made from scratch using different flavour combinations. Unlike say French cuisine where there are five master sauces, Indian cuisine has a multitude of different sauces and even within a huge country such as India, people find themselves as strangers to the cuisine from another area.

South Indian cuisine tends to be  lighter, more watery and spicier whereas North Indian cuisine tends to be richer, creamier with more cream, butter and nut sauces. He explains the origin of the very popular butter chicken. It originated 60-70 years ago in Delhi where a chef had some leftover Tandoori chicken. He made a tomato, butter, cream and garlic sauce and that’s how we find ourselves with butter chicken. And check out this vat of butter chicken sauce being made. That’s a lot of butter (or buttah!). And Kumar tells us that the best results are achieved with a tandoor oven as that imparts a smokiness to the chicken that is hard to replicate at home.

But now onto the recipes. Today we are making my favourite curry a palak paneer. How long will it take? Once the mise en place is prepared, just 15 minutes. Palak Paneer is a delicious and very healthy curry made up of a spinach puree with cubes of Indian cottage cheese.

The Magic of Jasper, Canada

“I think I can see cats” I say to my fellow travelling companions who are all similarly spaced out from the flight that we have just taken from Sydney to Edmonton. We had endured a 15 hour airline flight only to board another flight and by the end of the day we would have been up for over 24 hours. Still, there’s nothing like a Canadian welcome to help you stay awake.

I decided that the best way to beat the already too long Sydney Winter weather was to head north like the geese (or was that south? Oh well I could never fly anyway). And heading North meant another visit to one of my favourite destinations, Canada. I had previously visited Montreal, Quebec and Vancouver but this time I was destined for Edmonton and Jasper. I think that you could play spot the tourist quite easily with us in Canada. The non Canadians are the ones looking the wrong way and driving on the wrong side of the road. They’re also the ones that are stopping with excitement when they see two deer frolicking on the roadside.

Yes on the way to Jasper deer on the roadside is a common occurrence (and sadly I didn’t have camera at the ready to capture them). We take the four hour drive from Edmonton to Jasper, the beautiful mountainside area just south west of Edmonton. Built within a national park they can only have a maximum of 10,000 residents living there and each one has to earn the right to reside there. Only people that work in Jasper can live in Jasper ensuring that there aren’t empty holiday houses there during the year. At the moment there are 4,500 residents and 39 restaurants which means that there is one restaurant per 116 residents!

Jasper is a pretty town and the buildings remind us of European towns. Little boutique shops sell a variety of things and seeing the temperature has lowered quite a few degrees, I am glad that I bought my coat!

We alight the bus and are chomping at the bit to go shopping but lunch calls and we head into Earls on the Rockies which has a first floor restaurant and patio area that faces right onto The Rockies and the township below. The menu is large and I have a little trouble deciding what to order but I go for an entree and a main regretting the fact that we don’t have time to try any of the desserts (the campfire s’mores were calling to me).

Leroy’s Crispy Dry Ribs coarse salt and cracked pepper $9.75

I tried these as I had read about them but the little pieces of crispy dry ribs were a little too dry for me. I know it says dry but I thought a fattier cut of pork rib would have been better to use for this to give them a balance between juicy and dry.

Grilled Chicken and Baked Brie Ciabatta $13.50

The grilled chicken and baked brie sandwich is delicious. The chicken breast grilled and thick and the baked brie, fig jam and slices of fresh apple giving it a sweet freshness. It comes with a load of chips and sauce.

Lois Lake Cedar Planked Salmon with Yogurt Dill Sauce fresh dill, yogurt, salt and pepper, brown basmati rice and seasonal vegetables $23.00

I was trying to be healthy so I ordered the salmon which is served with a yogurt dill sauce, kipfler potatoes and roasted carrots. The salmon was a little overcooked, I do like it only just cooked through or even slightly underdone but the potatoes and carrots were well cooked and seasoned. I wasn’t a huge fan of the yogurt sauce on the salmon, usually I do like yogurt sauces but I didn’t feel that this went well with it and the salmon would have benefited from just the fresh dill and lemon.

We are dying to have a wander around the gorgeous little town to see what they have to offer. We pass plenty of charming shops (backed by a stunning mountain backdrop) where we take a peek inside.

Because I had managed to lose my voice the lovely Sam offered to be my interpreter as I wanted to visit a few places and do some shopping and people tend to look at your strangely if you whisper hoarse things to them. We walked into the Patricia Street deli which was voted the number 1 place to eat in Jasper according to Tripadvisor. Inside it doesn’t look like your typical Australian/Italian/European deli but there is one thing in common-a delicious smell. We watch as a queue of people who are eagerly queuing up for a bespoke sandwich of their choice.

They are known for their rotisserie chicken so I wanted to try a roll with this chicken but with whatever else they recommended. Jeanette who owns and runs the deli and along with her husband Glen asked me if there was anything on the menu list on the chalkboard above that I didn’t like and there wasn’t so they made me a fresh sandwich. I spied two trays of freshly baked chocolate chip and oatmeal cookies and ordered some for good measure (research luvvies, research!) and then spy some girl scout cookies and get excited. I know it mustn’t be exciting for Canadians or Americans but I recall seeing those on my favourite tv shows growing up and I always wondered what they were like so I buy those too for good measure.

A friend, whom I won’t disclose for fear of embarrassing her, once told me that she didn’t understand why men left her. She said to me one evening

“I cook for them, I clean for them. They get a nice meal, what more could a man ask for?”

“”Ahem. Hmmm…” I immediately thought of one thing. “That sounds like a great mum or dad. You left off something quite important to men…”

She looked at me aghast but had to concede the point that perhaps she was describing the role of a parent rather than a partner. But that’s not to say that the relationship between men and food is something to be sniffed at or ignored.
