We have just started experimenting with ribs on the BBQ and it’s great fun. The pizza stone has me intrigued, would love to try it.

Yes, another day of grey skies and more rain. Where is Spring? Getting a bit tired of wearing my winter clothes. Would love to slip on a sundress. What I love to put on the BBQ at this time of year is some lamb backstraps marinated in chilli flakes, lemon rind, olive oil and garlic served with a watermelon, fetta and mint salad – just waiting for some sushine!

  • 3. Kristina | October 15th, 2011 at 7:50 am | #

My husband does the best boned leg of lamb, with lots of rosemary and garlic. definitely a fave in our house.

I can’t remember the last time we enjoyed a barbecue, but it is on the plan for our xmas get together as this year we wanted to try something a little less formal. I would really love this pack, especially the pizza stone. Can’t think of a better way to spend time with family and friends than cooking outdoors and enjoying the sunshine, not to mention saving on power and not heating the house!

  • 14. matt | October 15th, 2011 at 8:38 am | #

I like grillin Lamb chops and veggies are great, plus I’m pretty good at smoking meats of any kind.

  • 15. Lea | October 15th, 2011 at 8:44 am | #

We like to cut up some cabanossi or chorizo and cook it on the BBQ as a tasty pre dinner treat occasionally. I am sure there are some herbs and a few other things I could add to them that would make it a fancier dish, but that’s why I subscribe to this blog and other pages, for ideas and inspiration. (love reading you pages every day!)

  • 20. Lilly | October 15th, 2011 at 9:06 am | #

I love all sorts of things on the BBQ – but I have to say one of my fondest members is BBQ-ing breakfast when we went camping (and I’m not the camping sort) cutting holes in the bread and cracking the egg in the hole, bacon, sausages, mushrooms, tomatoes and PANCAKES :)

  • 21. GourmetGetaways | October 15th, 2011 at 9:16 am | #

My family loves barbies on a perfect Australian summer. Whenever we have one, it will always be a multicultural affair, inviting close friends and neighbours to the multicultural themed BBQ party. We’ve had Indian Tandoori BBQs (spicy tandoori chicken, with lots of Indian spices thrown into the barbie to spice things up a bit), Thai Tom Yum BBQs (lots of fresh seafood barbie, seasoned with authentic Tom Yum flavour), Malaysian Rendang BBQs (beef barbie served with Rendang mix, yum!), traditional Australian Lamb BBQs (not spicy, all the kids love it), Greek “Opa!” BBQs (lots of grilled barbequed baby octopus, served with luscious Greek salads, except for the breaking of plates ;-) ), and a whole lot more. The one that I loved the most is the Australia Day BBQ where I get to cook my specialty, Kangaroo steak barbie, served with a splash of multiculturalism thrown into the mix – a gentle touch of Szechuan five spices for flavour, barbecued eggplant drizzled with luscious Italian olive oil, wrapped inside warm sumptuous Greek Pita bread. I love the combination of freshness and earthy flavours this barbeque brings to our Australian produce and the special meaning of this dish. The barbie is the perfect time where we get to share the joys eating and relaxing under the sweltering heat of a gorgeous Australian summer!

It’s funny you mention BBQ-ing as this weekend in Perth we’re expecting 28 degrees today then 35 tomorrow – so I dare say a BBQ meal may be on the menu. I love to do breakfasts on the BBQ – eggs, bacon, chipolatas, veggies. Yum!

after the easy-lites have heated up enough, wrap some taro and sweet potato in foil and place it directly on top of the ehat beads before resuming with BBQ. at the end, you get some fragant and soft sweet potatoes and taro. eat it straight or mix it with vanilla ice cream! so good!

Usually, sausages…. nothing tastes the same like BBQed sausages charred on the outside and hopefully, cooked on the inside! You can tell, that our BBQing is not always that successful.

We only just bought our first BBQ and it arrived yesterday! We’re so excited, we’ll be putting everything on it :) I’m most looking forward to using the rotisserie to cook a lamb on the spit. And reading through the other answers has given me other great ideas!

I’d love to win this! We just got a new Weber Q but don’t have any accessories yet.

My favourite thing at the moment is chicken. It doesn’t dry out on the bbq like it does with some other cooking methods. I also cooked my eggplant parmigiana on it the other night when the power was out.

  • 44. RedDoll | October 15th, 2011 at 11:58 am | #

Nothing goes past a whole fish on the bbq, make a few slits down the side of the fish, rub some herbs and butter into the them then layer some slices of lemon down each side of the fishy and wrap it in foil…so quick and easy even hubby can do it now! It used to be “you catch it and clean it and I’ll cook it” but now I’ve got him doing the lot :)

  • 65. immy_jane | October 15th, 2011 at 4:30 pm | #

I love BBQ food it’s so much easier to clean up after than regular kitchen cooking.
Octopus and Abalone would have to be my favourite bbq foods, they’re great served hot with a dash of sea salt, cracked pepper and freshly squeezed lime juice or soy sauce.
Another nice combo is large hunks of pineapple on skewers wrapped with bacon, Delicious!
Best of all are BBQ desserts!
I love making aluminum pouches and filling them with berries, peaches apricots etc with a couple of shots of liqueur (Cointreau, baileys or brandy work well), With a stick of cinnamon, some brown sugar/honey and a couple of cloves. Serve them straight from the pouch with ice cream or thickened cream it makes a tremendous summer dessert.

    Corn!

  • 71. oliviajd | October 15th, 2011 at 5:36 pm | #

I love to cook my version of potato salad – par-boil potatoes with the skin on, cut them into slices, then chargrill them until they are nicely golden and crispy. Serve them over a bed a baby spinach with ricotta, lemon zest, really good olive oil and a generous amount of salt and pepper. The heat of the potatoes makes the spinach wilt slightly and makes the ricotta become lovely and soft. Delicious!

  • 72. Flower | October 15th, 2011 at 5:49 pm | #

Timely giveaway Lorraine, the sun came out for us today :) I like to do Malaysian style fish smothered in chilli paste and wrapped in banana leaves, and satay! And as odd as this sounds, I use the barbie to deep-fry, since it has a wok burner on it and I can deep-fry outdoors.

  • 88. Phunk | October 15th, 2011 at 11:17 pm | #

35 in Perth tomorrow, that sunny enough for you? ;)
To be honest, the barbie is generally my hubby’s domain although I love doing slices of zucchini & eggplant on there and great big field mushrooms :)

Love a bbq, everything tastes better cooked and eaten outside. My fave is hamburgers made with plain old mince, bread, parsley and egg served with yummo tomato sauce but when I want to be fancypants marinate a deboned lamb leg with preserved lemon, parsley, mint, garlic and oil. Then sear either side put the lid down and cook until pink and juicy.

Good ol’ rissoles and sausages with drinks are the best for a BBQ with all your friends, but when its just the family, a barbequed lamb roast is so juicy and tasty. I also like little potato cubes cooked on the plate after the meat, they turn out crispy with that great barbeque flavour. I love the chorizo suggestion above and we’re buying a BBQ today hopefully so shall try it out.

I love BBQ the way we used to do it back in my small Malaysian hometown, such as:

Chicken wings – wrapped in banana leaf, or doused in honey

Seafood – assam fish wrapped in foil, prawn skewers with pineapples, fresh whole crabs, stuffed squid

Meat – Bite-sized steak, lamb cutlets with mint sauce

I am missing home already :(
But I also can’t wait to do another BBQ (if the warm weather persists long enough here in Melbourne).

Whole snapper. Marinated in Indonesian spices like Ginger and turmeric and chilli. Wrapped up in big banana leaves and straightn on the barbie. So juicy and tender and fragrant!

Stir fry green prawns in their shells in lots of rocksalt in a wok on the side burner. The prawns come out beautifully juicy and not too salty. It’s fun to sit around peeling them, licking your salty fingers (and drinking more beer as a result).

Take one whole chicken, split it down the middle rub with butter, garlic and lemon lots of sea salt and cracked black pepper, place in a hot BBQ with lid down. Must eat with fingers( just so you can lick them during your meal)!

Polynesian Pork Sate’ is a family favourite. I have been using this recipe for our summer barbeques for over 30 years.
Marinading lean pork cut into cubes with one grated onion, 1-2 cloves garlic, 4 brazil nuts grated, 1/2 cup lemon juice, 1/4 cup soy sauce, a few drops hot pepper sauce (I use tabasco), one teaspoon, coriander, 2 tablespoons brown sugar and 2 tablespoons salad oil. Season with pepper.
Combine marinade ingredients and marinade meat for at least 2 hours. When ready to cook, thread pork on four metal or bamboo skewers and place on a hot barbeque plate for 20-25 mins, brushing pork with marinade and turning often during cooking.
This recipe always goes down really well with family and friends.
I guess now the weather has warmed I will get the barbeque ready and cook this next weekend!!

Yes it is that time of year again when the old BBQ comes out. I hang up my cooking mits and let my hubby take care of what the family eats. We love to marinate Lamb Cutlets in olive oil, lemon juice, garlic and oregano. Not extravagant by any means but at least the kids eat all of their meal. For dessert, BBQ’d bananas sprinkled with cinnamon sugar(with ice-cream). Salads are the usual side – potato, cous cous, rice or an Italian tomato salad. Happy BBQ’ing everyone

Pineapple Barbequed Lamb Shanks are the way to go, so tender and refreshing marinated in pineapple juice.
We marinate the lamb shanks for 4 hrs minimum with 1 cup of pineapple juice, 2 tspns curry powder, 2 tblspns brown sugar, 1 clove garlic crushed, teaspoon salt, ground black pepper and 2 tblspns salad oil. Place shanks over glowing coals and cook for 25-30 mins, turning often and basting with the marinade. Place the retained pineapple slices on barbeque 5 mins before shanks are cooked. Serve with salad and French bread and salad.
This is a delicious and tasty way to barbeque lamb and we regularly use this recipe for our Summer Barbeques. Enjoy!!

I love cooking chicken pieces(wings, butterfly, drumsticks…whichever takes your fancy) that has been marinated in minced ginger, Japanese soy sauce, chopped shallots (and a touch of honey if you are like me :p). You could cook this in a pan as well but the charred skin from the barbeque just adds that extra layer of flavour don’t you think? :>

    Dear Lorraine

This may sound a little strange but my friends and I have cooked okonomiyaki on the bbq before, and it turned out deeeeeelish! :p We fried various cubed meats/seafood on the bbq with a bit of salt and minced garlic and just mixed it into the batter and cooked the pancakes on the bbq.

We were also instructed by our Japanese friend to fry some eggs on the side as well, and serve them on top of the okonomiyaki. I have to say the moment I pierced the egg and spread the gooey yolk on the pancake, mixing it with the kewpie mayo, okonomi sauce and bonito flakes – was a highlight of my life :>

    Best regards
    Ravel

Slow roasted, honey, maple, mustard glazed ham leg!!
Heat up the barbie. Remove skin from the ham, score the fat and place fat side down on the grill. Close the lid and leave for 20 mins. After 20 mins turn to other side. Continue in this manner until the fat is blackened. Remove ham from bbq, remove the blackened fat from the ham and glaze with a mix of honey, maple, dijon and wholegrain mustards. Return to Bbq, turn burners to low and slow roast the ham, glazing every 15-20mins for 1.5hours
The result is the most amazing, fall-off-the-bone, tender, juicy, sweetened meat you’ll ever eat. It’s so moorish, Im drooling just thinking about it now!

Teriyaki Kebabs are the way to go for a refreshingly easy barbeque.
500gr Rump or round steak cut into 1″ thick strips
    1 x 15oz tin pineapple chunks
    stuffed olives.
Marinate steak in 1/4 cup soy sauce, one tablespoon dry white wine, one clove garlic chopped and one tablespoon oil. Mix marinade in a mixing bowl, add steak strips and coat well with marinade and leave to stand for 1/2 hour.
Then weave each meat strip on to a skewer, piercing an olive and then a pineapple chunk each time you pass it through the meat.
When skewers are completed place them over glowing coals and barbeque quickly, turning often. This are great garnished with pineapple and parsley sprigs and service with rice and summer salad!!

    Dear Lorraine

Have you ever been to Movida in Melbourne? I bought their cookbook (*ahem* actually I bought Movida and Movida Rustica – I go a bit wild when it comes to buying cookbooks :s), and one of the dishes in there has turned out to be perfect for the BBQ:

It is a chargrilled lamb skewer, which I’ve cooked on the BBQ a couple of times. You marinate the cubed lamb leg meat overnight in cumin, Spanish sweet smoked paprika, nutmeg, turmeric, cayenne pepper, sea salt, fresh chopped parsley, minced garlic, fino sherry (YES) and olive oil overnight.

I love how the fino sherry cuts through the fattiness of teh lamb. And I find the flavours of the spices really come out after barbequ-ing.

I like serving the skewers with romesco sauce – recipe also in Movida. You basically blend cooked capsicum, tomato, onion, roasted almond and hazelnut, sea salt and a bit of toasted bread in the blender :>

    *drools*
