Win Two Tickets to the Variety Of Chefs Dinner Worth $500!

Whilst food can be nourishing for the body, what can be good for the soul is giving to a charity. And when you can combine the two, well that is even better! Variety is a wonderful children’s charity dedicated to improving the lives of sick, disadvantaged and special needs kids. In the last three years, the Variety of Chefs dinners in Sydney and Brisbane have raised over $500,000 for Variety!

This year, there are three chefs Regan Porteous from Toko, Peter Kuruvita and Mr Chen the NTD Chinese culinary competition winner. The menu is as follows:

    It will be great if I can go to that event,
    my favorite dish would be Freshly shucked Pacific Oysters Tosazu

    Im currently living in canberra as a student, me and my boyfriend occassionally come to sydney just to eat oysters from sydney fish market and for that we will come in the morning and go back to canberra at night.

    I have been to sydney again for a long time due to part time job and study, I will be so happy if I can go there to taste the beautiful oysters :) YUM!

    I would love to attend and all the dishes sound fantastic. I could never go past oysters though, so the Freshly shucked Pacific Oysters Tosazu would be my number one pick. Simple and delicious flavour combination.

    All of it sounds good… I’d love to eat the Thinly sliced Kingfish sashimi, chilli yuzu ponzu dressing as it sounds so Delish and I can imagine the flavour sensations on my tongue, excited is the word I’d use to describe it.
    The other item that tickles my interest is the tremella and goji berry rock candy stew – it just sounds awesome.

    A hard choice between Peter Kuruvita’s offerings but I think the Kinilaw wins! Based on a Filipino ceviche, his ingredients (SBS recipes) transforms this into a taste-tingling dish.

    Spanner Crab Kinilaw, as I can appreciate how FIDDLY it is to pick a crab and it is something I am reluctant to do at home. I am also fascinated with cured food, so I’m sure this will titillate the tastebuds!

    Peter Kuruvita’s Spanner Crab Kinilaw. I saw this dish on SBS and immediately fell in love with this mouth watering delight. Though this is a Filipino inspired dish, I love Kuruvita’s “fusion” cooking approach by adding his Sri Lankan culinary touch, creating a colorful multicultural dish that is not only beautiful to look at, but flavorsome as well, with the perfect balance of Spanner crab salad, Tomato concasse and Chilli vinaigrette fusing together in culinary harmony. :-)

My husband and I went there last year for our wedding anniversary and I now feel sorry for all the other restaurants, as I would love to go there again this year and every year!

    Peter Kuruvita is a renowned seafood chef with his Asian flvours and it will be wonderful to try his other tantalizing tasties such as the Wagyu Beer, Short Ribs with Celeriac and Smoked Pomme Puree. Celeriac is so delicious and as its season of availablity is so short I would love to taste this enticing offering. I have made celeriac and king Edward dauphinoise which was great but this smoked puree sounds delectably delicious. I know the meat will be superbly satisfying.

    The dish that tantalises my tastebuds is the Wagyu beef sort ribs…

    I do my own slow cooked recipie at home which cooks for 4 hours in a homemade sauce,,,,would love to see the difference of using the Wagyu ribs,,

    I attend a charity event each year for Mothers Day. It is the highlight of the year for me. This year’s guest speaker was Maggie Beer. The experience is a truly memorable one. As a true foodie I am always on the lookout for wow factor, taste sensation meals. How amazing would it be to be part of a pure foodie indulgence at an amazing venue, all for a great cause. I’m a great lover of seafood so my standout would have to be Spanner Crab Kinilaw. I’m adding this event to my bucket list ha ha.

    Would love to attend this faaaaabulous event! I have just started to eat fish (late to the party on this, I know!) so the dish that jumps out to me on the menu is the thinly sliced Kingfish sashimi, chilli yuzu ponzu dressing… and of course you can’t go past Aussie oysters!

    I’d never heard of Mr Chen so I googled him – turns out he was one of the winners of the Silver Awards of NTD’s 4th International Chinese Culinary Competition, and his specialty is Sichuan cuisine! It appears that Sichuan food has become more and more popular in Oz, as there seems to be many new Sichuan restaurants opening in various major cities.

    Is stuffed pear representative of Sichuan cuisine? Maybe if it is stuffed with loads of chillis! I’m most interested in trying this dish out.

    Wagyu Beef dish. I tried Kobe beef in Japan so I’m always curious when a dish claims to be using ‘wagyu beef’. The smoke pomme puree sounds interesting and I think (without tasting it :p) it’ll pair lovely with the Short Ribs.

    Saw Peter on SBS last Thursday – loved how he cooked a dish with Asian ingredients (bitter melon) and Western techniques (burnt butter!)! Would love to taste his dish in person :)

    I’d love to try Peter Kuruvita’s Wagyu Beef dish. I’ve been watching his Island Feast show on SBS and have been very intrigued by some of his cooking techniques. For example his use of Sprite in cooking (last Thursday’s episode), which reminds me of a friend’s recipe where he adds Cola to Japanese soy sauce, mirin and cooking sake to make teriyaki sauce (instead of using sugar). The result was a beautifully sticky glaze with a deeper taste coming from the taste of the Cola. Delicious! :)

    I like Sichuan food so I am most excited to see what Chef Chen has to offer. I’m slightly puzzled that he’s been assigned with dessert as dessert does not traditionally feature in mainland Chinese cuisine especially Sichuan food where you tend to see wok-fry chicken covered in 1000 chilli’s.

    So I’d like to try the Tremella and goji berry rock candy stew – it may not sound as enticing as a warm pear frangipane tart with milk sorbet and panna cotta, it might turn out to be an elegant dish – didn’t they use to serve tremella to the emperors? ;)

    I’d love to try Peter Kuruvita’s Wagyu Beef dish because:
    (a) I’m a huge fan of Peter and have been watching his Island Feast show religiously. Would LOVE to see him cooking in person!
    (b) The combination of short ribs and smoke pomme puree sounds totally irresistible. Lorraine, I’ve tried Joel Robuchon’s Pomme Puree recipe you posted and it was utterly rich and delicious! I’m interested to see how Peter’s smoke pomme puree compares. I think the smoky flavour will match the short ribs nicely.

    My curiosity continues – Mr Chen’s dishes interest me because he specialises in Sichuan food and people don’t in general rate Chinese desserts. But if he uses the lovely Chinese yellow pear, (I’m also extremely curious to what filling it’ll have!) I think the stuffed pear could be a winner!

    I tried this for the first time last Christmas at Fort Dennison restaurant… What an amazing dish – the beef is so flavorful and tender.. Melts in your mouth. Would love to relive that moment! Yum

    The things one do to get one’s workaholic husband out to a spectacular unforgettable experience. How dare you Lorraine force a couple of true foodies to try and choose between any of these truly awesome sounding dishes. Of course we would be salivating in anticipation of the next course, all the while taking in the ambience,conversation with our nearby seated partners and discussions about each course. I’m sorry but it’s hard to choose. If you are going to be technical, I’ll go the seafood although I’m up for the surprise element. Lorraine, I know you have a sense of humour so please know I was only joking, I am not having a nasty go at you, it’s just so hard to choose as this is world class. The winners will be SO LUCKY!!

    I am a huge admirer of stuffed pears. Also a huge admirer of this outstanding and worthy cause, and all its amazing contributors. As my child is a cancer survivor I have heard much about what Variety achieves. Raising money for the standers to help wheelchair bound children is such a worthwhile cause.
