Oh, man … I wish I were there so I could attend … Happy Weekend
One of these days I will need to plan a trip to Australia. What a wonderful event. Good luck to all! Have a great weekend.
It will be great if I can go to that event,
my favorite dish would be Freshly shucked Pacific Oysters Tosazu
Im currently living in canberra as a student, me and my boyfriend occassionally come to sydney just to eat oysters from sydney fish market and for that we will come in the morning and go back to canberra at night.
I have been to sydney again for a long time due to part time job and study, I will be so happy if I can go there to taste the beautiful oysters
YUM!
It would have to be Wagyu Beef, Short Ribs, Celerica and Smoke Pomme Puree. My mouth is watering just reading it.
spanner crab kinilaw XD loved it
Peter Kuryvutas Spanner Crab Kinilaw! This would be a dream come true and a perfect gift to myself for my 1 year of blogging!
I would have to say the spanner crab kinilaw. I have never actually tasted crab and would love to try it!
Thinly sliced Kingfish sashimi, chilli yuzu ponzu dressing
I am definitely a desert girl ! The stuffed pears would be my main ….
They all sound delightful and what a wonderful cause! If I had to choose though it would be Peter’s Spanner Crab Kinilaw
Wagyu Beef, Short Ribs, Celerica and Smoke Pomme Puree. Yum!
Short ribs for sure!
I would love to attend and all the dishes sound fantastic. I could never go past oysters though, so the Freshly shucked Pacific Oysters Tosazu would be my number one pick. Simple and delicious flavour combination.
All of it sounds good… I’d love to eat the Thinly sliced Kingfish sashimi, chilli yuzu ponzu dressing as it sounds so Delish and I can imagine the flavour sensations on my tongue, excited is the word I’d use to describe it.
The other item that tickles my interest is the tremella and goji berry rock candy stew – it just sounds awesome.
Freshly shucked Pacific Oysters Tosazu is absolutely my favourite and would be hard to beat.
I think my favourite would be the dish with the short ribs. I had some for dinner last night and they were amazing. xx
Kingfish sashimi, fresh and simple
Living in Sydney must be wonderful for a food lover
I’m off to the Noosa Food and Wine Festival in an hour. I’ll eat my fill and think of you all. LOL
A hard choice between Peter Kuruvita’s offerings but I think the Kinilaw wins! Based on a Filipino ceviche, his ingredients (SBS recipes) transforms this into a taste-tingling dish.
It would have to be the Stuffed Pear Tremella & goji berry rock candy stew for me. Sounds amazing!!
OMG they all sound delish but I have to say that the sound of “Wagyu Beef, Short Ribs, Celerica and Smoke Pomme Puree” made my tummy dance.
A hard choice as they all sound fabulous, I’ll choose Beef Tataki, pickled onions, soy, sake, vinegar share platter.
I love the Wagyu Beef, Short Ribs, Celerica and Smoke Pomme Pure because it would taste fantastic and I can almost smell it just from its name
im due to have a baby in 2 weeks and have been unable to eat any raw fish – so Thinly sliced Kingfish sashimi, would cure the craving for sashimi i have had for the last 9 months – it all sounds amazing
Spanner Crab Kinilaw – because I have never been brave enough to try crab in a restaurant and imagine how this would be for my first time!
Each dish sounds very interesting and each chef is no doubt very clever. i think the Stuffed Pear
Tremella & goji berry rock candy stew as I am curious about its taste and presentation. Thanks.
I vote the Spanner Crab Kininlaw, so fresh and lovely, yummo!
I like the sound of them all BUT there is one dish in particular I’d like to try because its name is just so intriguing: Mr Chen’s Tremella & goji berry rock candy stew! Thanks for a great giveaway Lorraine!

There are many dishes on that list I haven’t tried, the one that catches my attention is Peter Kuruvita’s
Wagyu Beef, Short Ribs, Celerica and Smoke Pomme Puree
sounds like such an amazingly sophisticated dish
I would love to try the Wagyu, short ribs, celeriac and pomme purée as it is getting colder and I am starting to crave slow cooked comfort food and fires.
My favourite dish sounds like it would definitely be the “Thinly sliced Kingfish sashimi, chilli yuzu ponzu dressing”. I love yuzu.
Spanner Crab Kinilaw, as I can appreciate how FIDDLY it is to pick a crab and it is something I am reluctant to do at home. I am also fascinated with cured food, so I’m sure this will titillate the tastebuds!
Peter Kuruvita’s Spanner Crab Kinilaw. I saw this dish on SBS and immediately fell in love with this mouth watering delight. Though this is a Filipino inspired dish, I love Kuruvita’s “fusion” cooking approach by adding his Sri Lankan culinary touch, creating a colorful multicultural dish that is not only beautiful to look at, but flavorsome as well, with the perfect balance of Spanner crab salad, Tomato concasse and Chilli vinaigrette fusing together in culinary harmony.
It gotta be the Tremella & goji berry rock candy stew. Sounds so intriguing!
Stuff pears!
I always love creative desserts. Also given the other food on the menu, stuffed pears sounds like a delicate and refreshing way to end the meal.
The Wagyu Beef, Short Ribs, Celerica and Smoke Pomme Puree sounds ahhmazing! Definitely my favourite
Tremella & goji berry rock candy stew- because I have the biggest sweet tooth ever!
I would have to say the Thinly sliced Kingfish sashimi, chilli yuzu ponzu dressing. I love anything and everything at Toko. My husband and I went there last year for our wedding anniversary and I now feel sorry for all the other restaurants, as I would love to go there again this year and every year!
I guess I’d pick Wagyu Beef, Short Ribs, Celerica and Smoke Pomme Puree

Peter Kuruvita is a renowned seafood chef with his Asian flvours and it will be wonderful to try his other tantalizing tasties such as the Wagyu Beer, Short Ribs with Celeriac and Smoked Pomme Puree. Celeriac is so delicious and as its season of availablity is so short I would love to taste this enticing offering. I have made celeriac and king Edward dauphinoise which was great but this smoked puree sounds delectably delicious. I know the meat will be superbly satisfying.

It’s Winter and a good hearty meal appeals to me so Peter Kuruvita Wagyu Beef, Short Ribs, Celerica and Smoke Pomme Puree is my choice. It will hit the spot on a cold rainy night in Sydney. Warming to the tip of my toes.

Wow, that’s a stunning prize! I’d love the Wagyu beef, it’s non existent where I come from and though we can have some in Sydney, I find this is a delicacy that is expensive (but oh so tasty!!)
I’d love to try Peter Kuruvita’s
Wagyu Beef dish. I tried Kobe beef in Japan so I’m always curious when a dish claims to be using ‘wagyu beef’. The smoke pomme puree sounds interesting and I think (without tasting it :p) it’ll pair lovely with the Short Ribs.
Saw Peter on SBS last Thursday – loved how he cooked a dish with Asian ingredients (bitter melon) and Western techniques (burnt butter!)! Would love to taste his dish in person

Thinly sliced Kingfish sashimi, chilli yuzu ponzu dressing would make a fabulous breakfast, no?
I’d love to try Peter Kuruvita’s Wagyu Beef dish. I’ve been watching his Island Feast show on SBS and have been very intrigued by some of his cooking techniques. For example his use of Sprite in cooking (last Thursday’s episode), which reminds me of a friend’s recipe where he adds Cola to Japanese soy sauce, mirin and cooking sake to make teriyaki sauce (instead of using sugar). The result was a beautifully sticky glaze with a deeper taste coming from the taste of the Cola. Delicious!
The Tremella & goji berry rock candy stew sounds delicious…

spanner crab kinilaw, as i have never tried crab before and this dish sounds delicious!
I like Sichuan food so I am most excited to see what Chef Chen has to offer. I’m slightly puzzled that he’s been assigned with dessert as dessert does not traditionally feature in mainland Chinese cuisine especially Sichuan food where you tend to see wok-fry chicken covered in 1000 chilli’s.
So I’d like to try the Tremella and goji berry rock candy stew – it may not sound as enticing as a warm pear frangipane tart with milk sorbet and panna cotta, it might turn out to be an elegant dish – didn’t they use to serve tremella to the emperors?
Would loveeeeeeee to try the thinly sliced Kingfish sashimi, chilli yuzu ponzu dressing

I ponder how long my flatmate’s dishwashing habits last.
Munching on limp instant mi goreng ain’t no fun,

Thinly sliced Kingfish sashimi, chilli yuzu ponzu dressing – yes pleaseeeeeee
I’d love to try Peter Kuruvita’s Wagyu Beef dish because:
(a) I’m a huge fan of Peter and have been watching his Island Feast show religiously. Would LOVE to see him cooking in person!
(b) The combination of short ribs and smoke pomme puree sounds totally irresistible. Lorraine, I’ve tried Joel Robuchon’s Pomme Puree recipe you posted and it was utterly rich and delicious! I’m interested to see how Peter’s smoke pomme puree compares. I think the smoky flavour will match the short ribs nicely.
My curiosity continues – Mr Chen’s dishes interest me because he specialises in Sichuan food and people don’t in general rate Chinese desserts. But if he uses the lovely Chinese yellow pear, (I’m also extremely curious to what filling it’ll have!) I think the stuffed pear could be a winner!
With fresh, raw spanner crab kinilaw on the menu, guests will always return for more.
One can never be pre-peared for Mr Chen’s Sichuan innovations, he constantly astounds diners with delightful new creations.
Tremella & goji berry rock candy stew sounds like just the ticket to start the weekend off with a bang!
Spanner crab kinilaw sounds like my kind of dish. I have never tried crab before and peter is one of my favourite chefs!
Beef Tataki, pickled onions, soy, sake, vinegar
I tried this for the first time last Christmas at Fort Dennison restaurant… What an amazing dish – the beef is so flavorful and tender.. Melts in your mouth. Would love to relive that moment! Yum
this has my mouth watering, the meat looks too good to be true and I want to taste it.
Wagyu Beef, Short Ribs, Celerica and Smoke Pomme Puree, sounds delicious
The kingfish sashimi! I just adore Japanese food!

Last chance to pick a meal and I’m going to have to go with Wagyu Beef, Short Ribs, Celerica and Smoke Pomme Puree – just so comforting for this winter weather!
With this menu you cannot lose, But which course fave to choose ?
I have to go with Regan’s platter,
Perfectly conducive to pre dinner chatter.
Spanner Crab Kinilaw, as I love seafood so this would be a terrific and very delicious dish to have in winter.
The things one do to get one’s workaholic husband out to a spectacular unforgettable experience. How dare you Lorraine force a couple of true foodies to try and choose between any of these truly awesome sounding dishes. Of course we would be salivating in anticipation of the next course, all the while taking in the ambience, conversation with our nearby seated partners and discussions about each course. I’m sorry but it’s hard to choose. If you are going to be technical, I’ll go the seafood although I’m up for the surprise element. Lorraine, I know you have a sense of humour so please know I was only joking, I am not having a nasty go at you, it’s just so hard to choose as this is world class. The winners will be SO LUCKY!!
I am a huge admirer of stuffed pears. Also a huge admirer of this outstanding and worthy cause, and all its amazing contributors. As my child is a cancer survivor I have heard much about what Variety achieves. Raising money for the standers to help wheelchair bound children is such a worthwhile cause.
Spanner crab kinilaw sounds amazing as peter is one of my favourite chefs and I have never tried crab before, so I think it would be a great experience!
LAST CHANCE!!!
Thinly sliced Kingfish sashimi, chilli yuzu ponzu dressing
Spanner crab kinilaw – cos I don’t even know what kinilaw is! It’s good to try new things
All of the above as a tasting plate. All chef’s have great food on offer. I would like to taste them all on the night.
Has this been drawn yet?
Absolutely mouthwatering…hope i win!!
