Long time readers know how much I love a good sandwich, especially an egg salad sandwich. These ransom finger sandwiches are cute and creepy plus what's a Halloween picnic or party without a sandwich? If egg salad isn't your thing, use any sort of filling you like. Tip: if you've got a crowd, double this quantity. They're VERY popular!

Preparation time: 25 minutes

Cooking time: 0 minutes

Makes 20 fingers

  • 4 boiled eggs
  • 1/3 cup/100g/3.5ozs. mayonnaise
  • 2 tablespoons red onion, finely chopped
  • Salt and pepper for seasoning
  • 50g/1.7ozs. soft butter
  • 20 almonds

Step 1 - Place the eggs, mayonnaise and onion in a food processor and pulse so that the eggs are finely chopped. Add salt and pepper for seasoning.

Step 2 - Cut the crusts off the bread and flatten them with a small rolling pin. Butter the bread all over and then place a tablespoon of filling leaving each end without the filling and roll up the bread pressing down each open end.

Step 3 - Cut a triangle on one end to make a finger tip and carefully cut knuckle lines making sure not to cut through the bread. Spread a little butter on the triangle tip and attach the almond. Cover well so that the bread doesn't dry out.
