Zumbo’s Cake Walk & Shop At The Star & Win A Signed Copy Of Zumbo, The Cookbook!

I am running late and when I get frantic my decidedly dodgy sense of direction tends to get more frantic (which is why Mr NQN tells me that I would be a terrible Amazing Race contestant). And we’re at The Star, formerly Star City but with an overhaul and a new look marketing campaign. Everything is different and I can’t tell whether we are in the front or the back or the side of the building and I feel a bit like Alice in Wonderland falling down the rabbit warren. And here I am about to see the Adriano Zumbo cake walk. And Zumbo happens to be running even later than we are!

The cake walk is his long held dream of having a fashion parade where models strut down a catwalk holding his creations based on a Parisian cake walk that he once saw.  He had held one previously but that was for the taping of his Zumbo television show and it was more staged for the television show rather than a cake walk. And about 200 guests made up of industry contacts, press, friends and family are here to watch his cake walk which is to celebrate the opening of his new store at The Star.

They’re running over an hour late and guests are kept suitably watered and fed with sushi and sashimi from Momofuku Seiobo next door and cocktails including popcorn martinis. Suddenly with a burst of music and a shimmer of the curtain, long legged models strut down the catwalk, pout, turn and flirt with the cameras and crowd.

And there isn’t just comely eye candy for the menfolk but also some for the ladies!

The latest season’s cakes are paraded on the catwalk and some of them match the outfits of the models. The catwalk is over after about 10 minutes of strutting and posing and Zumbo comes out for a final bow.

They raise the curtain to reveal the new store with a “I Love Zumbo” in red neon, a turning gumboot display, a bathtub of chocolates and spotlit specimens of cakes in the window. Adriano makes a heartfelt speech thanking his family and his staff and tells people that there will be samples of the goodies brought out on platters. He then invites everyone to play in the shop and then to join him at the Cherry Bar afterwards.

It seems I’m trying but failing spectacularly to eat healthily. Perhaps just before Christmas isn’t quite the time to instill a healthy eating regime. Even typing out the words makes a voice inside my head shriek “destined to fail!” but nevertheless, when faced with a meal in front of me, I try and at least make an imitation at resisting. A pale imitation mind you…

I’m standing in front of the Carriageworks at Eveleigh with bucketfulls of rain falling and the odd cyclist speeding by in a rush to beat the rain. I’m trying to carry a camera bag, handbag and an umbrella while cursing my sartorial choice of open toed heels in the rain. And thankfully John and Peter Canteen is right near the main entrance and only requires a short sprint in the rain.

John and Peter Canteen is a catering business that has expanded to serve lunch and dinner and looking around, it appears quite full this Wednesday evening. There are theatre patrons that want a quick drink as well as couples and groups that look like they’ve settled in for the night. White fringe trim hangs from scaffolding and studio lights and there are striking black and white print cushions and stripey banquettes.

Yoshiko is already sitting there and she has had a good look at the menu already. As a vegetarian she’s happy with the choices, three entrees and one main. Me, I’m quite smitten by much of the menu from the sounds of things. We take some recommendations from the waitress and service throughout the evening is friendly and deferential. We start with entrees, both vegetarian, as I am trying to eat healthily-well I did mention I was trying ;)

Roman beans, bagna cauda and pangratatta $15

I had no idea what to expect from this dish and it is a finely shredded green and yellow bean salad tossed with bagna cauda (a garlicky anchovy dip) and a sprinkling of crunchy, golden, rough breadcrumbs which tickle my fancy immensely. The beans have a lovely crunch to them and the bagna cauda gives the salad flavour while the pangratatta breadcrumbs gives it crunch.

Baked brown onions, burrata $18

If I see burrata on a menu, I will inevitably have to order it. I know, I only just mentioned that I was trying to eat healthily and then I’m eating a cheese with a mozzarella outer and an oozy cream centre paired with soft, sweet baked onions. The burrata and onions are a good pairing and all that I think is missing is a piece of bread to mop up the juices left. I do try not to embarrass my dining companions by licking the plate!

There’s only one thing that can provide comfort when you wake up at 8am on a cold, windy Sunday Spring morning. When you look over to see the glowing red numbers read 14 degrees and mumble “What happened to Spring?”. The normal instinct is to huddle under the covers with a loved one. However as my loved one Mr NQN was snatched from me at 3am that morning to go into work I consoled myself with my second loved one, chocolate at a chocolate class at Coco Chocolates newest chocolate school in Mosman.

I’m on my own driving and remarkably arrive incident free across the bridge at Middle Head just past the cafe at Burnt Orange. There are a range of buildings and the Coco Chocolate school and “cellar door” is located at number 21 which faces the carpark. On a sunny day (not today) the lawn area outside is where kids can play and should you want to while away the hours and nibble on chocolate coated strawberries, a glass of Bollinger champagne will set you back a mere $28!

As Mr NQN was called in for work, I asked his sister Amaya if she wanted to join me at the chocolate class and delighted, she accepted. It’s raining heavily in fat hard drops or even horizontally at times and yet all five of us students can’t imagine spending this rainy spring day anywhere else. We start off with a hot chocolate (or coffee or tea but really, who is going to say no to a hot chocolate?).

Nutmeg hot chocolate

I choose the fragrant nutmeg hot chocolate to take the cold edge off the day. Today’s class is an all day class and on the last Sunday every month Rebecca Kerswell the owner of Coco Chocolates who has two boutiques in Sydney and two in the U.K. and are the exclusive chocolatiers to Harvey Nichols and Jenner’s in Scotland. And interestingly, Jenner’s said no to a Haggis chocolate but they’re working on bringing one out here instead! There are all day classes on the last Thursday and Sunday of each month and half day classes are on the last Wednesday and Fridays of the month (except December for both class types). Today’s class is a level 1 class where we cover hand tempering, an almost lost technique of tempering couverture chocolate. The children’s classes are held every Tuesday during school holidays.

The next level 2 to be held around Christmas (dates to be announced) sounds very exciting as students will learn how to paint and decorate chocolates using a spray gun and cocoa butter as well as caramels and pralines and decorate the butterflies above! And the biggest hit of them all is the children’s classes where kids learn how to make chocolate freckles, frogs and chocolate nests with students as young as three years old. Although Rebecca tells us that one student asked to make the rose creams and told her that she only liked dark chocolate!

Rebecca started her career as a chocolatier ten years ago and studied at the Valrhona school for chocolate in Lyon. Hand tempering on marble (nor granite as many kitchens use) is somewhat of a dying art. At a Manchester chocolate festival they asked people how many hand temper and only three people put up their hand. Most places temper chocolate using large machines. Here at Coco, she hand tempers and uses single origin Valrhona chocolate and organic ingredients.

Cocoa beans come from a cacao tree which can grow anywhere but only bears fruit 20 degrees either side of the equator.  The pods are roughly the size of a football and inside the cocoa pod the cocoa beans are encased in a sweet, white coating. Larger companies simply wash off this coating but the coating apparently has a wonderful pineapple and honey flavour to it and they sometimes makes liqueur from it. Ideally, for a wonderful tasting chocolate, they steep the cocoa beans in the white coating and allow the sugars from the coating to infuse into the beans giving it a sweet flavour. And once this is done the best way to dry the cocoa beans is in the sun although many places use something similar to a big air dryer.

The next process that amalgamates everything together is called conching. It is the most expensive process in chocolate production as they pay per hour for the conching process which is the mixing process that ensures that the chocolate has a smooth finish. Cheaper chocolate  is conched for only five hours whereas more expensive chocolate is conched for a period of three days. Conching brings the particle sizes down so the cheaper chocolates are grainier whereas the more conching is done, the finer the chocolate. And it is called conching because originally the paddles that used to mix everything were shaped like conch shells although they are no longer shaped that way.

Jamie’s Italian, Sydney

If my lucky number is eight, my current unlucky number seems to be five. Why five? Well because with five people you may have to wait 1 hour and 40 minutes for a table at Jamie’s Italian but with six you can make a booking and with a group of two, you can have a table within about half an hour. My friends had encouraged me to make the booking for six people and just cite one as a no show but I was being good.

But after being told it would be a 15 minute wait or thereabouts on the phone that afternoon, a 30 minute wait by the first person while standing at the queue and then an hour as we put our name down after standing in the queue, I’m slightly regretful.

During the wait period Viggo and Dave got up and ordered us some nibblies while Louise, Mr NQN and I waited at the bar. And it was a good thing that he did because you know that twilight where you’ve been waiting for more than you’ve thought and you get your cranky pants on? Well that was Mr NQN. And somehow we completely missed the order for free bread on the menu although I would think just bringing it for people like in most restaurants might be a good idea.

There is a tray of nibblies brought out to the people waiting in the queue which is a nice gesture but the tray comes back still half full bypassing everyone in the bar waiting. I bump into a friend Ute who says to me “Is it just me or is there no signage for this place?”  Oliver is said to pay a visit to his latest outpost some time in February.

Italian Nachos $7

We tried the Italian nachos, crispy deep fried four cheese ravioli blanketed with a thick covering of grated parmesan and “angry’ arrabiata sauce. The ravioli weren’t bad although you couldn’t really tell that there were four cheeses inside and the filling has shrunken leaving mostly an air pocket. The spicy arrabiata sauce is nice and spicy.

Oven dried tomatoes cooked with basil, garlic and creamy ricotta bruschetta $12

The bruschetta, and they all come as pairs, is crispy and crunchy and comes with three different toppings. The first features oven dried cherry tomatoes, basil and garlic and ricotta which is cooling and crunchy and has a good balance of flavours.

Roasted mushrooms grilled and marinated with lemon, thyme and garlic $11

My favourite out of the three bruschetta is the roasted mushrooms that were grilled and marinated with lemon, thyme and garlic as the flavours matched well with the meaty mushrooms.

Spanner crab with chilli, lemon and zest mayo $15

There is a generous amount of crab here and I expected that I would like this best but the crab was quite wet in texture (you can perhaps see the pooling of the liquid in the picture) which made the bread a bit wet too.

It is getting close to one and a half hours and the queue outside has all but disappeared. Dave suggests that we line up again to get a table and figures that we’ll have better luck asking for a “table for three and two but next to each other.” We ask if we can squeeze on a table for four and they see what they can do.

We finally make it upstairs after 1 hour and 40 minutes and by then we know what we want to order having had plenty of time to peruse the menu. The walls are exposed brick, lightly graffiitied with painted metal and wooden chairs and banquettes. There is a downstairs section next to the kitchen which is pumping furiously with testosterone and steam. Our waiter is lovely and accommodating and helps us with the menu selections.

Crispy Squid $12

The crispy squid comes with chopped chilli, parsley and a wedge of lemon. The squid itself is a little tough although we do adore the “really garlicky mayo” which is true to its name-no kissing anyone after that!

Butch Foods, Camperdown

What’s in a name? When Queen Viv and I drove past Butch Foods one afternoon we were taken by the look , a homespun inviting look but also a name. As someone that was really supposed to be called Selina but never was (and I think it suits me better) I know what a name can do to you. So  earmarked for a visit in my notepad I noted the first of that day’s good omens: a miracle park outside (1 hour yes but because we were sitting in the window I could lookout for parking inspectors) ;) .

Belgian hot chocolate $4.50

Formerly a family run takeaway business for 20 years the building was built around 1886 and was infested with termites which necessitated a gutting and rebuilding using sustainable and recycled materials and equipment. The service is friendly from the young guy behind the counter who is very sweet and enthusiastic. We order a “hot chocolate with sticky marshmallows” (just regular marshmallows, I thought Sticky was a new brand!). And a chai latte which is so spiced Queen Viv’s eyebrows shoot up and her eyes pop. The hot chocolate is good although it tastes more of cocoa than chocolate. It comes in a sizable mug and try as I might I can’t finish it.

Clayton’s Jaffles $4.50

I’m delighted to see a jaffle on the  menu as a homespun touch.  They’re not made in those nifty jaffle makers that seal the ends rather it is done more as a toasted sandwich in a sandwich press. And although we ordered a ham and cheese one a cheese and tomato one arrives. Nevertheless it is quite good and with just the right amount of butter, enough to give it flavour but not enough to grease the fingers.
