An Original Recipe by Lorraine Elliott
Preparation time: 25 minutes
Cooking time: 50 minutes
-
2x900g/2lb Jap pumpkins
-
2 cups/240g/8.8oz grated cheddar cheese
-
200g/7ozs feta cheese crumbled
-
250g/8.8oz sour cream
-
250g/8.8oz cream cheese
-
1/4 cup chopped chives or spring onions
-
pepper (salt isn't necessary for the dip and the feta is salty)
-
1 sheet of puff pastry and a little milk to glaze
-
1 egg beaten
Step 1 - Set oven to 180C/350F. Cut the top off the pumpkins and scoop out the seeds. Place on a baking tray. Mix the cheeses, sour cream, chives and pepper well in a bowl and spoon this into the pumpkins. Bake for 25-30 minutes until the top is golden.
Step 2 - Increase heat oven to 210C/410F. Place a baking tray in the oven to heat up. Make the broomsticks first by cutting out a broomstick shape using a sharp knife out of the puff pastry. Use the knife gently to draw the broom bristles. Place on a sheet of baking paper and brush with egg wash. When the oven is ready, lift the sheet of greaseproof paper and bake for 10-15 minutes until golden and crisp.
