Pomegranate ice cream (Jackson Pollock style)

4 tablespoons of sugar

1 cup thickened cream

2 cups milk

3/4 cup granulated or caster sugar

1 teaspoon vanilla bean paste
Step 1 - Firstly make syrup. Put POM Wonderful juice in a small saucepan with sugar and boil on medium/high heat until reduced by half (about 7-10 minutes). Cool well (you don't want this even slightly warm).
Step 2 - In a bowl, whisk the cream, milk, sugar and vanilla until the sugar has dissolved. Then place in ice cream maker and churn according to directions.
