Spiced Apricots

Spiced Apricot Yogurt

  • 1 cup dried Turkish apricots
  • 1 1/3 cup water
  • 1/2 cup white sugar
  • Juice of 1 orange (I used a tangelo because that's what I had)
  • 1/2 a star anise
  • 1 cardamom pod
  • 500g/1 pound Natural yogurt to serve

Step 1: If you have time (and it's not strictly necessary), cover the apricots in boiling water and soak for about an hour or overnight.

Step 2: Place the sugar and 1 1/3 cup water in a saucepan and dissolve the sugar over medium heat. Add the apricots (drain if you've soaked them), the orange juice and the star anise. Crush the cardamom pods with a mortar and pestle or the blunt end of a knife handle and add these too.

Step 3: Simmer with the lid on for 15 minutes and then remove the lid and simmer for 5 minutes until syrup has thickened. Serve with natural yogurt.
