Chinese Chicken Salad Balls

Makes about 15 bite sized balls

  • 1 cup smoked almonds, finely chopped
  • 2 cups cooked chicken meat (or turkey, duck, ham) roughly diced
  • 1 cup cheddar cheese, grated
  • 1/2 cup celery, chopped
  • 1/2 cup green onions, chopped
  • 5 tablespoons mayonnaise
  • 2 teaspoons toasted sesame seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • a few drops sesame oil to taste

Step 1 - I do this entirely in a food processor to make it as easy as possible. I start with processing the smoked almonds finely. Place in a bowl for later.

Step 2 - Place the rest of the ingredients in the food processor and pulse until well combined. Line a tray with parchment. Take a spoon and make walnut sized balls with your hands. Roll them in the chopped almonds and place on parchment. Cover and refrigerate until serving. These can be made six hours ahead of time and stored in the fridge.
