Raspberry & Basil Drinking Vinegars
Makes two types of drinking vinegar
- 1 cup fresh or frozen berries (I used raspberries)
- 100g/3.5ozs basil leaves
- 1 cup raspberry vinegar
- 1 cup apple cider vinegar
- 1.25 cups icing or powdered sugar or honey (to taste)
- You will also need two jars with lids with at least a 3 cup capacity.
Step 1 - Place the berries in one jar and the basil leaves in another. Pour the raspberry vinegar over the raspberries and the apple cider vinegar over the basil. Shake about gently and place lid on top and screw tightly. Place on benchtop at room temperature for a week and shake once a day.
Step 2 - Sift the icing or powdered sugar into the jars. I wanted the basil to be sweeter so I used 3/4 of a cup in it and just 1/2 a cup of sugar in the raspberry one but do it to taste. Stir well until all of the sugar is dissolved. If you use honey, it will take about a day to dissolve.
Step 3 - Keep in fridge and serve with soda water or sparkling mineral water. I use about 1 part vinegar to 4-5 parts soda.
