Chilli and Sour Cream Corn Fritters
An Original Recipe by Not Quite Nigella
Preparation time: 5 minutes
Cooking time: 10 minutes
Makes 6 corn fritters
- 1/2 cup plain all purpose flour
- 1 teaspoon baking powder
- 210g/7.4oz tin of creamed corn
- 2 eggs
- 1 small red onion, peeled and diced
- 175g/6ozs. fresh corn shucked from the cob (you can also use tinned)
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- Oil for frying
- Sweet chilli sauce and light sour cream or natural yogurt to serve
Step 1 - Place the flour and baking powder in a bowl and in a jug whisk the creamed corn and eggs together and add the wet mix into the dry. Add in the onion and corn kernels. Season with salt and sugar. Place a non stick frypan on medium to high heat.
Step 2 - Add a teaspoon or so of oil and fry the fritters two or three at a time. Turn over when small bubbles appear on the surface and then cook on the other side. Serve with sweet chilli sauce and sour cream or natural yogurt.
