Toasted Coconut & Lime Bread
An Original Recipe by Not Quite Nigella
Preparation time: 10 minutes
Baking time: 1 hour to bake, 5 minutes to grill or fry
- 2.5 cups plain all purpose flour
- 3 teaspoons baking powder
- 1.5 cups flaked coconut (I used 1/2 cup of shredded coconut in it) plus a small handful to sprinkle on top
- 1 cup caster or superfine sugar
- 1.5 cups coconut milk
- Juice and zest of 2 limes
- 1 teaspoon coconut essence
- 1 teaspoon vanilla extract
- 150ml/5fl ozs. coconut oil (melted) or vegetable oil
- 2 eggs
Step 1 - Preheat oven to 180C/350F. Line a loaf tin with baking paper or a liner. In a large bowl, mix the flour, baking powder, flaked coconut and sugar until combined. In a jug whisk the coconut milk, lime juice and zest, coconut essence, vanilla extract, oil and eggs. Make a well in the dry ingredients and mix together until just combined. Scoop into the prepared tin and sprinkle with extra coconut flakes and bake for 1 hour until a skewer inserted in the centre comes out clean.
Step 2 - To serve, slice and then grill or pan fry and serve with butter.
