Feta & Lemon Bruschetta

- 1 garlic clove, peeled
- 200g/7ozs feta (you can also use low fat although the texture will not be as smooth and you may have to add more oil)
- Juice of half a lemon
- 60ml/2ozs. extra virgin olive oil, divided in half
- 4 slices your favourite bread
- Red pepper flakes
Step 1 - Place the garlic clove in a food processor and chop finely. Add the feta, lemon juice and olive oil and process. You can leave this a bit chunky for texture or blitz it until smooth.
Step 2 - Drizzle some oil on the slices of bread and grill. Top with the feta mix and then grate a little lemon zest on top and add the red pepper flakes.
