Sweet Potato Latte
An Original Recipe by Lorraine Elliott/Not Quite Nigella
Preparation time: 3 minutes (excluding roasting time)
Cooking time: 5 minutes
- 1 roasted sweet potato around 100g/3.5ozs*
- 2 cups regular or coconut milk
- 2-3 tablespoons maple syrup
- A little ground cinnamon (optional)
*To roast sweet potato wash the sweet potato and place the whole thing skin on in a 180C/350F oven for 45 minutes. I usually bake 4-5 at a time to save time as they're great in salads.
Step 1 - Blend up the sweet potato with a little of the milk until it forms a smooth paste. Add the rest of the milk and process until it becomes foamy and the sweet potato is totally blended up. It will be quite foamy and aerated.
Step 2 - Place in a saucepan on medium high heat and heat until warm. Add maple syrup to taste. The thick foam flattens a little but you still get a layer of sturdy foam on top. Sprinkle with cinnamon if using.
