The 5 Minute Quiche In A Mug

Preparation time: 2.5 minutes
Cooking time: 2.5 minutes
Makes 1 quiche in a 250ml/1 cup capacity mug
- 1 teaspoon butter
- 2 eggs
- 3 tablespoons milk
- 1 tablespoon cream cheese
- 1/2 tablespoon chives/spring onion
- 1 slice ham, chopped up
- 4 tablespoons grated cheese
- 1/2 slice bread, cubed (crusts on is fine)
- 1 cherry tomato, quartered
Step 1 - Place butter in the mug and microwave for 20 seconds or so. Break eggs in a mug and add milk and whisk with a fork. Add the cream cheese, chives, ham, half of the cheese, bread cubes and cherry tomatoes and mix to combine. Add the remaining cheese on top. Cover with cling film and microwave on full power for 1.5-2 minutes. Check for doneness, if the egg is not set, microwave for an additional 30 seconds or until done. Allow to cool as it will be very hot when done.
The 5 Minute Vegemite and cheese quiche

- 1/2 slice of bread
- 2 teaspoons butter
- Vegemite (to taste)
- 2 eggs
- 4 tablespoons grated cheese
- 1 tablespoon cream cheese
- 1 teaspoon melted butter
- 2 teaspoons chives/green onions
Step 1 - Spread the non melted butter and Vegemite on the slice of bread and cut into cubes. Break the eggs into the cup and add half of the cheese, cream cheese, butter and chives. Place the cubes of bread in with the eggs. Top with the other remaining tablespoons of cheese.
Step 2 - Cover with cling film and microwave on full power for 1.5-2 minutes. Check for doneness, if the egg is not set, microwave for an additional 30 seconds or until done. Allow to cool as it will be very hot when it has finished cooking.
