Mojito Ice Blocks
An Original Recipe by Lorraine Elliott/Not Quite Nigella
Preparation time: 10 minutes
Cooking time: 3-4 hours freezing time
Degree of difficulty: very easy
Makes 2 cups or 4-6 popsicles depending on the size of your molds
- 1/4 cup mint leaves plus a few extra for decoration
- 3 limes
- 1/2 cup rum
- 1 cup lemonade
Step 1 - First measure the capacity of your ice pop molds. Mine are about 1/2 cup each so I needed 2 cups in total to make four. Place the mint leaves in a cocktail jug and juice two of the limes into it and muddle the leaves with the lime juice. The more you muddle the more little flecks of green you get. Drain into a measuring jug.
Step 2 - Add lemonade and rum and mix.
Step 3 - Slice up the extra lime and add some half moon slices and fresh mint into the pop molds. Pour over with the cocktail mix and freeze until set.
