Sweet Potato Toast
Makes about 10 pieces of "toast"
- 1 kilo/2.2lbs sweet potato (thickest is ideal, hence the enormous size)
- Beetroot Tzatziki dip (recipe below)
- Nutella and strawberries
- Prosciutto slices
- Avocado
Step 1 - Peel the sweet potato and cut it into thin slices. The thicker the longer the toast will take to make. Ideally you want it to be about a third of an inch or 3/4 of a centimetre. Place in toaster. Your toaster will probably pop a few times but keep pressing down until the sweet potato is cooked and this can be anything from 4-8 minutes depending on your toaster. It's done when a big bubble appears and the sweet potato is tender but not mushy.
Step 2 - Spread with the toppings!
Beetroot Tzatziki dip
- 2 medium sized beetroot or 1 large (around 500g/1.1lbs), roasted and peeled
- 1/2 cup Greek yogurt
- 1 garlic clove peeled
Step 1 - Cut the beetroot into rough chunks and process along with the yogurt and garlic.
