Welsh Rarebit

Serves 4
- 8 slices of sourdough bread
- 4 slices leg ham, cut in half
- 320g/11.3ozs. cheddar cheese, gated
- 1/3 cup beer or milk
- 3 teaspoons Worcestershire sauce
- 2 teaspoons plain flour
- 1 egg, lightly beaten
- 1/4 cup green onions, sliced
- Black pepper
- Cayenne pepper
Step 1 - Preheat the grill. Toast the bread until lightly toasted and place ham on top.
Step 2 - Mix the cheese, beer or milk, Worcestershire sauce, flour and egg together in a non stick pan on low to medium heat until it melts and becomes a sauce. Season with black pepper.
Step 3 - Divide the sauce among the 8 slices of ham topped bread. Grill until browned. Top with spring onions and cayenne pepper and serve immediately.
