Cuban Pork Chops

Cuban Pork Chops

Preparation time: 10 minutes plus 1 hour marinating time

Cooking time: 15 minutes

Serves 2

  • Finely grated zest and juice of 1 large lime or 2 small limes
  • Finely grated zest and juice of 1 orange
  • 2 garlic cloves, peeled and finely diced
  • 1 tablespoon dried onions
  • 1 teaspoon ground cumin
  • 1 teaspoon ground white pepper
  • 50g/1.7ozs. butter
  • 2 pork loin chops (weighing about 700g/1.5lbs total)
  • Salt to season

Zest the fruit first. As you can see my lime was huge and almost as big as an orange!

Step 1 - Mix the zests and juices in a bowl. Add the garlic, onions, cumin and white pepper. Marinade the pork chops in this mixture for 1-6 hours (you can also do this overnight).

Step 2 - Heat half of the butter in a frypan on medium to high heat and fry the pork chops. It will take a while to cook them through as they're quite thick (about 6-7 minutes on each side). Serve with garlic mashed potato.
