Peking Duck Sushi

Makes 20 pieces of Sushi
- 1 Peking Duck
- 1 cup uncooked sushi rice
- 2 tablespoons sushi seasoning
- 10g fresh chives, chopped
- 1 Lebanese cucumber, thinly sliced
- 3 tablespoons hoi sin sauce
Step 1 - Make the sushi rice according to directions. Once cooked, allow to cool and stir in the sushi seasoning and the chives.
Step 2 - Slice the skin off the duck in rectangles. You can leave a little meat on the skin or make it just skin.
Step 3 - Using damp hands, shape the rice into small walnut sized balls and place on Chinese soup spoons on top of cucumber slice. Brush lightly with the hoi sin sauce and then place the piece of skin on top. Serve.
