Floating Snowman Chai Eggnog

For Eggnog
- 2.5 cups milk
- 1.5 cups cream
- 2 tablespoons ground cardamom
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon nutmeg (freshly grated)
- 1 teaspoon ground allspice
- 1/2 teaspoon ground cloves
- 1/2 teaspoon black pepper
- 5 eggs
- 3/4 cup sugar
- 1/2 cup brandy
- 1/2 cup rum
For Floating Snowman
- Whipped cream
- Candy Corn
- white marshmallow (three per snowman)
- Straight pretzels
- 2 tablespoon melted chocolate
- Desiccated coconut for decoration
Step 1 - Heat the milk, cream and all the spices (cardamom, cinnamon, ginger, nutmeg, allspice, cloves and black pepper) in a saucepan until simmering and then allow the spices to steep for 5 minutes. Pour into a heat proof measuring jug.
Step 2 - Place the eggs and sugar in a blender and blend until fluffy. Put the blender on medium speed and pour the warm milk mixture through the funnel and combine. Add the brandy and rum. Serve warm or you can also chill this and keep it in the fridge for 3-4 days.
Step 3 - To make the floating snowman, break pretzels in thirds or halves (depending on the size of your marshmallows and pretzel sticks). Using a pair of scissors cut a hole in the marshmallows going in quite deep and insert the candy corn deep into the marshmallow (it can pop out otherwise). Spoon the chocolate into a parchment bag (see here how to make one). Draw eyes and a mouth above and under the candy corn nose in melted chocolate. Stick pretzels in as arms and legs in the second and third marshmallows.
Step 4 - Spray whipped cream on top of the chai eggnog (it works best if the eggnog is cold as the cream tends to melt too quickly with hot egg nog and the snowman may fall in). Place the body parts on top of the cream.
