Chocolate Hemp Amazeballs
An Original Recipe by Lorraine Elliott
Preparation time: 10 minutes
Cooking time: 0 minutes
Makes around 12-16 balls depending on size
- 1 cup almond meal
- 1/3 cup cacao powder (I used a super dark one from a baking store that I bought for Halloween, hence the black colour)
- 1/3 cup hemp protein powder
- 5 Medjool dates, pitted
- 2 tablespoons maple syrup
- 2 tablespoons coconut oil
- 1 teaspoon vanilla
- 1/4 cup hemp seeds (for rolling)
Buyer's tip: hemp protein powder and hemp seeds can be found at health food stores or those "scoop" stores where you can buy nuts and flours by the weight.
Step 1 - In a food processor, blend the almond meal, cacao powder, hemp protein powder and dates until you get a fine powder. Then add the maple syrup, coconut oil and vanilla. The mixture will clump together.
Step 2 - Line a baking tray with parchment and place the hemp seeds in a shallow bowl. Start rolling out the balls in your hands-how many you make depends on how large you want them. Roll them in the hemp seeds. You can store these in the fridge (they can also be stored at room temperature but they are best in the fridge).
