Radiatore Pasta Recipe

Serves 4
- 500g/1.1lbs radiatore pasta
- Olive oil for frying
- 2 small onions, peeled and diced
- 3 cloves garlic, peeled and diced
- 3 Italian pork sausages, skin removed
- 800g/28ozs. tinned diced tomatoes
- 200g.7ozs. cherry tomatoes, halved
- 1/2 cup tomato paste
- 1/3 cup pitted black olives
- 200g/7ozs. feta, diced
- Fresh basil leaves for serving
Step 1 - Fry the onions in the olive oil on medium heat until translucent. Add garlic and a bit more oil and fry for a minute. Then add the sausage in pieces breaking it up with your spatula. Add diced tomatoes and cherry tomatoes as well as tomato paste and simmer for 10 minutes or until thickened. Season with salt and pepper. I also add a tiny bit of sugar if the tomatoes are a bit sour.
Step 2 - While it is cooking, boil the pasta in plenty of salted boiling water until al dente. Drain and then stir into the sauce. Add the black olives and feta and top with basil.
