Raspberry Daiquiri Popsicles

Preparation time: 10 minutes
Cooking time: 0 minutes (although does require 3 hours freezing time)
Makes 6 ice blocks
- 3 cups fresh or frozen raspberries
- 1/2 cup icing sugar
- 2/3 cup rum
- 2 tablespoons lime juice
- 1 teaspoon vanilla extract
- 75g white chocolate (optional)
- 2 teaspoons coconut oil
Step 1 - Place icing sugar in a food processor and blitz until the lumps disappear. Blend this with the remaining ingredients. Pour into molds and freeze.
Step 2 - Option: melt the white chocolate and mix with the coconut oil and drizzle it on top of the ice blocks.
