Cauliflower With XO Sauce

Preparation time: 10 minutes
Cooking time: 10 minutes
- 1/2 head cauliflower, cut into small florets
- Oil for frying
- 2 cloves garlic, peeled and smashed
- 2 tablespoons black vinegar
- 1 tablespoon soy sauce
- 2 tablespoons XO sauce
- 1 spring onion, sliced
- 2 branches curry leaves, leaves only
Step 1 - Heat frying pan or wok on high. Add oil and fry the cauliflower until golden tossing and turning to get it cooked on all sides. Add a bit more oil and add the garlic and fry for 30 seconds or so.
Step 2 - Add the black vinegar and soy sauce and cook for another 30 seconds. Then add the XO sauce and curry leaves and toss to coat. Served with spring onion.
