Salmon Wings

Preparation time: 10 minutes
Cooking time:
- Around six pairs of salmon wings
- 1/4 cup plain flour
- 1/4 cup tapioca or corn flour
- 2 teaspoons cayenne pepper
- 1 teaspoon salt
- 1 teaspoon pepper
- Oil to drizzle
Salsa
- 1-2 cloves garlic, peeled and chopped
- 1 brown anchovy
- 1 teaspoon mustard
- 1/4 cup parsley leaves
- 4 tablespoons oil
- 2 tablespoons lemon juice
Step 1 - Preheat oven to 200C/400F and line two trays with parchment. Place the flours with the cayenne, salt and pepper in a ziplock bag or in a bowl and shake around to distribute. Dip the salmon wings in each coating all sides and place onto the prepared tray. Drizzle with oil and bake for 10 minutes. Turn over and roast for another 5-8 minutes.
Step 2 - Meanwhile make the salsa verde. Place all ingredients in a food processor and whizz to combine. Serve with the salsa and lemon on the side.
