Peach Sorbet Iced Tea

Preparation time: 15 minutes plus steeping/cooling/freezing time
Cooking time: 0 minutes
Makes 6 cups of iced tea
For Sorbet
- 6 yellow peaches, skinned and cut into segments
- 1 cup caster or superfine sugar
- 1 tablespoon lemon juice
For Iced tea
- 1.5 litres/6 cups hot/cold water (I like to steep the tea in 3 cups of hot water and then top with 3 cups of cold water)
- 6 tea bags of your favourite fruit tea, green tea or white tea
Step 1 - Make the sorbet first. Semi freeze the peaches if you have time for 2 hours in the freezer. Then blend with the sugar and lemon juice and taste for sweetness. Place in a freezer proof container to freeze for 6 hours or overnight. Tip: sorbet is great made with the bags of frozen fruit. About 20-30 minutes before you want to scoop it, take it out of the freezer and place in the fridge.
Step 2 - Steep the tea bags in the hot water. I don't sweeten the tea because the sorbet is sweet but go ahead and sweeten it with sugar if you like a super sweet tea. Top up with the cold water.
