Cherry Ripe Slice

Preparation time: 15 minutes plus 45 minutes fridge setting time
Cooking time: 0 minutes
- 1/2 to 1 packet Malt o Milk biscuits
- 280ml/10flozs. sweetened condensed milk
- 250g/8.8ozs. desiccated coconut
- 110g/3.9ozs. coconut oil, melted
- 150g/5ozs. glace cherries, chopped in half

2-3 teaspoons red food colouring

250g/8.8ozs. dark chocolate
- 1.5 tablespoons coconut oil
Step 1 - Line a lamington or slice tray (17x27cms/6.8x10.8inch) with parchment. Place half of the biscuits on the base of the tray and set aside. Place the condensed milk, coconut, coconut oil, cherries and red food colouring in a bowl and mix to combine well making sure the mixture is a uniform colour.
Step 2 - Spread this mixture on top of the lined biscuits. At this stage you can place another layer of biscuits on top or leave it with just the bottom layer of biscuits (I prefer it with just one layer of biscuits on the bottom). Place in fridge for 30 minutes or so to firm up.
Step 3 - Melt chocolate and coconut oil together in the microwave or double boiler and mix until smooth. Spread over the top of the slice and refrigerate to set.
