Salmon Baked in Fig Leaves

Cooking time: 20 minutes
- 500g/1.1lbs salmon fillets
- 10 fig leaves
- 2 tablespoons extra virgin olive oil
- 1/2 lemon, sliced
- Chilli salt (or use regular)
- 1 teaspoon garlic powder
- Black pepper
- 2 tablespoons pickled ginger (gari), finely chopped
Step 1 - Preheat oven to 160C/320F and line a baking tray with parchment. Wash fig leaves well and pat dry and cut the stems off the leaves. Lay half the leaves on the tray and place salmon on top. Add oil, lemon slices, salt, garlic powder and black pepper.
Step 2 - Cover with the rest of the leaves and wrap up with kitchen string if it needs it. Bake for 20 minutes. Unwrap and serve salmon with gari or pickled ginger and salad.
