Classic Apple Slice

Serves: 8-10
- 1 cup/150g/5ozs. cake flour
- 2 teaspoons baking powder
- 1 cup/85g/3ozs. desiccated coconut
- 1/2cup/110g/3.9ozs. caster or superfine sugar
- Pinch of salt
- 125g/4ozs melted butter
- 400g/14oz tin of apples (or lightly stewed apples)
- 3 tablespoons sugar
- 300g/10.6ozs. sour cream (not light)
- 2 tablespoons sugar
- 1 egg
- Around 1.5 tablespoons cinnamon sugar to sprinkle (1.25 tablespoons sugar, 1 teaspoon ground cinnamon)
- Icing sugar (optional)
Step 1 - Preheat oven to 160C/320F and line a 20x20 or 8x8 inch square baking tin with parchment on the base and sides.
Step 2 - In a large bowl, whisk the cake flour, baking powder, coconut, sugar and salt until combined. Add the melted butter and mix and then press into the prepared tin and bake for 20 minutes or until set.
Step 3 - While the base is baking mix the apples and the sugar together. Then whisk the sour cream, sugar and egg together and set aside. When the base is cooked spread the sweetened apples on top of the cooked base.
Step 4 - Raise the oven temperature to 180C/350F. Then spoon over with the sour cream mixture over the apples and then sprinkle with cinnamon sugar. Bake for 25 minutes or until set. Cool and then chill in the fridge and then cut up. Serve chilled (this needs to be stored in the fridge).
