Macadamia Halva Cookies

Serves: 8
- 60g/2ozs. butter, soft, room temperature not NOT melted
- 60g/2ozs. brown sugar
- 30g/1oz. caster or superfine sugar
- 2 tablespoons beaten egg
- 1/2 teaspoon vanilla
- 110g/3.9ozs. plain all purpose flour
- Pinch bicarb of soda
- 115g/4ozs. halva, cubed
- 50g/1.7ozs. macadamia halves
- 2 tablespoons sesame seeds
Step 1 - Preheat oven to 180C/350F and line 2 baking trays with parchment. Mix the butter and two sugars together with a spatula. It should quickly form a cohesive mix if the butter is soft. Add the beaten egg and vanilla. Then add in the flour and bicarb.
Step 2 -Divide the dough into 8 balls and stick 3-4 cubes of halva and 3 macadamia halves in each. Roll in sesame seeds and place four balls on each tray. Bake each tray for 14-15 minutes. Cool on the tray and serve.
