Tuna Pasta

An Original Recipe by Lorraine Elliott

Preparation time: 2 minutes

Cooking time: 8-9 minutes

Serves: 2

  • 250g/8.8ozs dried pasta (I used spaghetti)
  • 300g/10.6ozs tinned tuna in oil (I also like the one with chilli)
  • 90g/3ozs butter, cubed, soft
  • Salt and black pepper

Step 1 - First boil the pasta in a large pot with well salted water according to directions. While this is cooking, open up the tins of tuna and add the tuna and its oil to a large bowl. Breaking up any chunks of tuna and add the butter.

Step 2 -When the pasta is ready take it out of the pot with tongs letting some water come along with it. Cover the tuna and butter with the pasta and then toss with the tongs melting the butter and creating a sauce. Add a ladleful of pasta water or two to help the sauce along but move quickly as you want the heat of the pasta and water to melt the butter and create the sauce. Add plenty of black pepper and a wedge of lemon and some parsley if you're feeling up to it.
