Mango & Passion Fruit White Sangria

Makes 4 cups
- 1 bottle white wine (3 cups/750ml/26flozs), chilled
- 175ml/6flozs mango syrup or nectar
- 175g/6flozs passion fruit pulp (frozen passion fruit works really well here too)
- 50ml/1.7flozs simple syrup (see recipe below)
- 15-30ml (0.5 - 1oz) peach schnapps or Grand Marnier
- 1 cup/250ml/8.8flozs chilled soda water
- Ice Cubes
- 1/2 mango, cut into cubes
- 1 orange, sliced
- Fresh mint to serve
Step 1 - Mix the wine, mango syrup, passion fruit, simple syrup, schnapps and mango cubes, orange and mint and refrigerate for 1-3 hours to infuse. Then add soda water and stir and serve in glasses with ice.
Easiest Simple Syrup
- 120g/4ozs caster or superfine sugar
- 120ml/4flozs boiling water, straight from a kettle
Step 1 - Dissolve sugar in the boiling water with a whisk, it will go cloudy for a second and then clear. Chill for cocktails and store in the fridge for up to 1 month.
