High Protein Snack Starbucks Egg Bite Dupe Recipe

Ingredients Needed
- 1 tablespoon melted butter
- 140g/5ozs streaky bacon rashers
- 260g/9ozs cottage cheese
- 6 eggs
- 210g/7.4ozs grated cheese (blend of Monterey jack, gruyere, cheddar and tasty cheese)
- 2 tablespoons/18g/1oz cornflour
- 1.5 teaspoons hot sauce
- 3/4 teaspoon white wine vinegar
- 70g/2.5ozs finely diced red onion
Step-By-Step Instructions
Step 1 PREPARE - Preheat oven to 150C/300F fan forced or 170C/338F conventional and brush the butter on the base and sides of 12 capacity muffin tray (or use liners). Brush the butter upwards on the sides. Put a kettle-ful of water onto boil. Sit the muffin tray in a larger tray with higher sides than the muffin tray for a water bath. Then place another tray of water on the bottom of the oven (two water trays = lots of steam!).
Step 2 BACON - If using bacon, place in a frying pan on medium heat and fry until crispy. Chop up roughly.
Step 3 BLEND - Add the cottage cheese, eggs, grated cheese, cornflour, hot sauce and vinegar into a food processor or Thermomix. Blend for 1 minute or until completely smooth and there are no lumps at all. Thermomix: 60 seconds, speed #8.
Step 4 POUR - Stir in the chopped onion and place into a jug. Divide the mixture evenly among the liners. Add bacon to each one making sure to push some of the bacon down into the egg mixture.
Step 5 BAKE - Place the muffin tray within the other tray. Slide this onto the oven rack and then carefully pour the hot water around the muffin tin so that it forms a water bath reaching at least halfway up the sides. Bake for 23-25 minutes or until the centre is set. Serve warm.
Personal Note
I used both bacon and ham for this and they really both worked well. Ham is lower in fat and had the lovely Christmas spices and honey added to it while bacon was tasty and crispy. Christmas seems like a long time ago and at the end of it, we really had three Christmases. We had Friendsmas in early December and then on Christmas Eve we had Mr NQN's family over for lunch where we served Christmas ham. Luckily ham doesn't need to be served hot because while the Elliotts are lovely people, they're kind of wild and when you ask them to come over at 1pm they all arrive around 2pm. As a type A individual this is challenging for me, but I try to roll with it because I know this will happen.
Mr NQN was in his office at the front of the house and he saw his brother Manu driving past with his hazard lights on (I think he was trying to find a park so that was his way of telling people to go around him). He usually comes with a range of fruit but this year he showed up with 2 bottles of Gatorade and 2 big bags of Kettle chips. "This is all I could get at the petrol station!" he said laughing.
We had to laugh at the Christmas Gatorade and I asked him if he was starting a new tradition of Christmas Gatorade. I don't think anyone was interested in drinking the Gatorade and since there was so much food, only one packet of chips was open. "I might just take these for tomorrow at the beach!" said Manu scooping up the Gatorades and the chips at the end of lunch. I tell you they're kinda wild!
