BBQ Chicken Mission Style Burrito Recipe

Ingredients Needed
- 1 BBQ or rotisserie chicken (approx 800g/1.7lbs stripped skin/meat)
- 250g/8.8oz Tomato and Basil rice pouch
- 2 large tomatoes (around 440g/1lb total)
- 200g/7.2ozs red onion, peeled (around 1 large)
- 2 avocadoes, ripe
- 400g/14oz tin refried pinto beans
- 200g/7ozs grated cheese (tasty, cheddar, Monterrey Jack)
- 150g/5oz garlic dip
- 30g/1oz packet taco seasoning mix
- 3 tablespoons coriander leaves, finely chopped
- 1 tablespoon lime juice
- 3 teaspoons Tajin seasoning or to taste
- 8 Jumbo tortillas
- 2 teaspoons oil for frying
Step-By-Step Instructions
Step 1 CHOP - Remove the meat and skin from the bbq chicken using food prep gloved hands. Chop the meat up roughly. Place in an extra large bowl. Heat up the pouch of rice in microwave and then add to the bowl. Remove calyx from tomatoes, dice tomatoes and season with salt and pepper. Dice the red onion. Cut avocado in half, remove seed and dice avocado flesh.
Step 2 MIX - Add the tomato, onion and avocado to the chopped chicken along with the refried beans, grated cheese, garlic dip, taco seasoning mix, coriander, lime juice and season with Tajin seasoning. Mix well and taste for seasoning. Tajin contains salt so you may not need to add extra salt.
Step 3 WRAP - Soften the tortillas either by microwaving them briefly for 10 seconds just to make them more pliable. Divide the mixture among the tortillas. Wrap up from the sides and then roll up into a fat log shape.
Step 4 HEAT - Heat a frying pan on medium heat and drizzle in a little bit of oil and fry 4 burritos at a time, seam side down. Fry for around 2 minutes on each side until golden. Wrap in foil and cut in half in the centre for easy eating.
Substitution notes:
While chicken is easy, also try this with other roast meats from the rotisserie like lamb, beef or pork!
Personal Note
I made these for Mr NQN as I was headed for a few nights away for a media trip. The day before I left I was busy so I asked him to buy a bbq chicken and run some errands. Within an hour I had 8 enormous burritos packed up.
He loves these as he loved Mission burritos. They're pretty much a meal in one as you have some meat, vegetables and carbs. And he loves anything that he can eat in one hand and type with the other. I made way too many for the number of days I would be away but when I came back they were all gone.
On the way back from our media trip Laura and I were driving home and Usher came on the soundtrack and Laura started laughing. She explained that when she was a teenager, peak attractiveness for a guy for me was the way that he danced to Usher. "Now I just want somebody that is going to pick up the coffee pods that I like from the store!" she said.
