Bird's Nest Cookies Recipe

Recipe Overview

Makes: 16 cookies

Ingredients Needed

  • 220g/7.7oz milk chocolate
  • 220g/7.7oz cinnamon chips
  • 200g/7oz fried noodles
  • Pinch salt
  • 48 mini Easter eggs (around 160g/5.6oz)

Step-By-Step Instructions

Step 1 MELT & MIX - Melt the chocolate in a double boiler or in the microwave at 60% power in 30 second intervals until melted and smooth. Add in fried noodles and salt and mix to coat well.

Step 2 SPOON - Line 2 baking trays with parchment. Using two tablespoons take around 35g/1.2oz of the mixture or a heaped tablespoon and place in a circle pressing down the centre. Place 3 eggs per "nest" before chocolate sets. Allow to set completely at room temperature.

Personal Note

The day that I made these cookies, I had one of the best days ever. At the moment my workload is high, I work 6 days a week as the blog is still just me and so when I get my one day off I am very happy indeed. And my perfect day involves me wandering around the house in pyjamas for the entire day. That to me is my little measure of when I can truly relax as it tells my brain that I don't have to get changed or work out.

Another way that really tells me that I'm having a proper day off is if I can watch tv during the day. For anyone that works regular hours, you know that that is mostly a night time or weekend activity. But getting to watch The Lincoln Lawyer while the sun is still shining outside is absolute heaven.

Of course with my day off I couldn't help but create this recipe because well you know me (I'm obsessed with my job!). But truly this was so quick that I think this was done in around 10 minutes.

And I'll amend my perfect day off to include snacking on these Bird's Nest Cookies in the afternoon too!
