An Original Recipe by Lorraine Elliott
Recipe Overview
Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 6-8 people
Ingredients Needed
- 200g/7oz streaky bacon (optional)
- 680g/24oz jar of dill pickles
- 200g/7oz spring onion and chive cream cheese
- 125g/4oz Greek yogurt
- 125g/4oz grated tasty or cheddar cheese
- 80g/3oz sour cream
- 2 sticks green onion (around 20g/0.7oz)
- 1-2 jalapeno chillies, chopped
- 1 tablespoon Buffalo hot sauce
- 1 tablespoon fresh or dried dill
- 2 teaspoons French onion sou powder or Ranch seasoning powder
- Potato Chips to serve
Step-By-Step Instructions
Step 1 BACON - First cook the bacon if using. Start with cold bacon rashers in a pan and heat the pan to medium heat. Fry until crispy. Drain on a double layer of paper towels and chop finely. Set aside.
Step 2 CHEESE - Remove pickles from jar and chop up (reserve pickle juice for re-pickling, see tip above). Then remove the cream cheese from its packaging and place on a plate and microwave on low until soft and spreadable. Add the cream cheese, grated cheese, sour cream in a large bowl and mix to combine.
Step 3 MIX - Add pickles, green onion, chopped jalapeno, Buffalo hot sauce, dill and French onion powder and most of the bacon (reserve 2 tablespoons to sprinkle on top). Mix well to distribute flavours and place in a bowl or in a pickle jar. Sprinkle with reserved bacon on top and serve with potato chips or crackers.
Personal Note
This is great for feeding a crowd as it makes a lot and people really love a homemade dip. I love having people over at our house and all of our friends love Teddy and Milo but sometimes Teddy needs a bit of a time out from people, especially if there are kids around.
One day we were looking for Teddy as he hadn't been hovering around. When you call Milo he always comes but not Teddy. Teddy does things when he wants and if it behooves him. We looked all over the garden as he likes to sleep on the grass and down the front and side of the house too. "Teeeeddy!" we called, to no response.
Mr NQN called me to the bottom of the stairs. "He looks like the dog from Silence of the Lambs!" he said excitedly and sure enough, Teddy in his need to preserve his peace, had taken himself upstairs. He was peering down at us, kind of like Precious the dog did in the movie, deciding whether to come down and see us or not!
So tell me Dear Reader, have you ever tried a dill pickle dip? And do you know the Silence of the Lambs reference?
