Deviled Egg Potato Salad Recipe

Recipe Overview

Preparation time: 20 minutes plus cooling time

Cooking time: 25 minutes

Serves: 12-15 people as a side dish (makes around 1.5kgs or 3.3lbs potato salad)

This recipe is best made 1 day ahead of time

Ingredients Needed

For Salad

  • 1kg/2.2lbs potatoes, washed well
  • 2 tablespoons salt
  • 8 eggs, hard boiled and peeled
  • 200g/7ozs streaky bacon rashers (optional)
  • 2 sticks green onion/scallions, sliced (around 30g/1oz)
  • 1/2 teaspoon sweet paprika

For Dressing

  • 200g/7ozs mayonnaise
  • 3 tablespoons gherkin relish
  • 2 tablespoons Sriracha sauce
  • 2 tablespoons Dijon mustard
  • 1.5 teaspoons dill (fresh or dried)
  • 1 teaspoon celery salt
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon white sugar

Step-By-Step Instructions

Step 1 POTATOES - Cut potatoes into 1.5cm/0.6inch pieces. Place potatoes into a pot of water with the salt and bring to a boil. Simmer until tender (around 12-15 minutes depending on how large you've cut the potatoes). Drain and cool completely (this can be done a day ahead of time).

Step 2 BACON (optional) - Fry bacon in a dry frying pan until crisp. Drain on paper towels and chop up into small pieces. Set aside.

Step 3 EGGS - Reserve 2 eggs for decoration. Cut remaining 6 eggs in half and scoop out the yolks. Chop up the whites roughly.

Step 4 DRESS - Blend the yolks with the mayonnaise until smooth. Add gherkin relish, Sriracha sauce, Dijon mustard, dill, celery salt, cayenne pepper and sugar and blend again. Add the cold potato cubes, chopped egg whites, green onion and dressing and mix to combine. Season with salt and pepper. Add bacon to the potato salad if using. Top with the 2 remaining boiled eggs cut into six wedges and sprinkle with paprika and serve.

Personal Note

I first heard of this idea of deviled egg potato salad from my new favourite creator on TikTok, Melanie Cade from Raising Cades. She lives in Alabama and has 10 kids and a husband and home schools her smallest kids. I love her vibe and seeing how they live is fascinating as it is so different from my life. She also has a salad bar in her house that her family help themselves to for lunch. It's nothing short of genius.

One thing she showed was a deviled egg potato salad that was being served at a game. I stopped the video and sat up. It was really the best of both worlds. We love deviled eggs and potato salad and I knew that I wanted to try it at home. It's apparently a big thing in the South. It was so delicious that I have Mr NQN asking me for it again. Maybe I should start a salad bar here but with just a husband and two dogs it might not work as well!
